Brick-Oven Pizza (Brooklyn Style)

Reviewed: Feb. 19, 2007
Used half whole wheat flour in the dough. Used fresh tomatoes and canned--both were great. My pizza stone did not like being preheated that hot so had to do things a little different but was excellent and will make again!

Chocolate Cobbler

I just ran across this recipe and couldn't believe I hadn't reviewed it. I haven't made it in a long time because it is SOOOO good and SOOOOO rich. I will definitely make it again. Soon.

French Onion Soup Gratinee

Reviewed: Mar. 4, 2008
Made as directed except I used Sherry instead of red wine (didn't have any) and I think it made a fair bit of difference in the flavor. Still wonderful but a tad sweet. Omitted parsley. Used dried thyme. Did not add any extra salt or pepper. Definitely restaurant quality soup. Will make again & again.

Spinach Quiche

Reviewed: Mar. 4, 2008
I just ate the leftovers for lunch--it is even better today! I did make a few changes, per other reviews. Only used 1 1/2 T. butter. Used fresh spinach & mushrooms. Used a 4 oz container of Sundried tomato/basil feta (all I could get) & more like 6 oz cheddar (still plenty). Only used about 1/2 c. milk. I also added tomato slices on top of the spinach layer. Great quiche!

Surprise Banana Cake

Reviewed: Mar. 4, 2008
I made this a long time ago & would give the recipe, as is, 3 1/2 stars. The changes I made this time around made this a 5 star, healthier cake. I used 1/2 c. white, 1/2 c. brown sugar. I used 2 bananas plus one 8 oz. can crushed pineapple w/ juice. When I added the wet ingred. to the creamed sugar/butter mixture I used an elec. mixer and beat quite a bit of air into it. For the flour I used 1 1/4 C. white, 1/2 c. wheat & 1/4 c. flax. Everything else as written. Frosted w/ a thin layer (half recipe) of cream cheese frosting. YUM!!!

Hash Brown Apple Pancake

Reviewed: Mar. 4, 2008
My husband & I both loved this! The kids didn't like it but that was okay---it left more for us! I left out the chives (didn't have any) & had to cut it to get out of the pan to flip it but so what?! It tasted wonderful! Will definitely make again.

Sweet, Sticky and Spicy Chicken

I followed other reviewer's suggestions & dredged in flour & s&p first and also cooked at a higher heat. Fantastic! We were all wanting more, including the kids. Very quick & easy also.

Pizza Without the Red Sauce

Reviewed: Oct. 25, 2007
Addicting! I made a large pizza (16 or 18") and we ate it all! Used homemade wheat crust, sesame seeds on edge of crust, half the garlic and only had 4 oz of feta so added some goat cheese. YUM!! My skeptical husband loved it too. Will definitely make again. Oh, make sure to use plenty of spinach as it really shrinks up in the oven.

Chicken and Bacon Shish Kabobs

Reviewed: Oct. 13, 2007
These are great!! Can't wait to make them again! I did not use the pineapple. I marinated this all day. I tried cutting the bacon into thirds instead of half--don't, just a little too small. I also precooked the bacon just until it was soft & opaque--perfect. The chicken was still moist & the bacon was crispy. I left the mushrooms whole. Yum-me!

Chicken, Feta Cheese, and Sun-Dried Tomato Wraps

Reviewed: Aug. 28, 2007
These are good, however we felt the wheat wraps conflicted w/ the flavor of the filling. (Maybe it was the brand I bought?) Also, for the "dressing" I used 1/4 cup lite Mayo mixed w/ a tablespoon of the bottled sun-dried tomato dressing for something creamier, per another reviewers suggestion. I will try these again with regular white flour wraps and as a cold pasta salad. Thanks! P.S. I just made this again, as a warm pasta salad, and it gets five stars! Whole family loved it.

Angel Chicken Pasta

Used 1/2 the amount of chicken, otherwise made as written. Excellent. A tad salty. I recommend not adding salt to your pasta water. Will definitely make again.

Highly recommend this recipe AND THIS ADDITION: double the marinade and after marinating, boil the marinade until thickend---use as a dipping sauce---OMG, this put this fantastic recipe over the top. Served with rice & steamed broccoli---fantastic meal!

Chicken Garlic Pizza

Reviewed: May 25, 2006
Loved it! Made a few adjustments (and completely forgot the tomatoes!)--doubled the butter mixture, used lots of fresh basil, omitted the cilantro, used grilled marinated chicken, added mushrooms and fresh mozz. I'm anxious to make this again w/ the tomatoes! Yum!
