Stuffed Jalapenos with Smoked Gouda and Pineapple

Fantastic! I cut the peppers in half lengthwise, roasted for about 20 min. before stuffing then cooked at recommended temp for about 20-25 min. Flavor is amazing---best stuffed jalapenos I've ever made!

Kentucky Bourbon Balls

Used pecans (none on top) and followed recipe, adding only a tad more bourbon when mixing the butter and everything together. MUST be served at room temp to appreciate flavors and texture. Never had them before---love 'em! Very easy to make. I ended up w/ about 36 and did not feel like they were small.

Baked Potato Salad II

Artery cloggin' heart stoppin' good! I used cheddar instead of Velveeta like others suggested and I replaced the green olives w/ green onions. Yum!!

Knudson's Knasty Habit

This was the drink of the weekend for the 4th of July. A couple of us thought we didn't like gin so we made the first one w/ Vodka---the ones w/ gin were much better. Everyone loved them and we will make them many more times. Thanks! Oh, we used Diet Squirt in place of the Knudsen's spritzer as we didn't know what that was.

Classic Aviation Cocktail

This is sour/bitter. I couldn't find maraschino liqueur (was told that it is an "old time" thing) so I used maraschino brandy. I did a little research on both the liqueur & brandy and found they are quite similar because both are made using the cherry pits (which is where the bitterness comes from). I would guess the liqueur may be a bit sweeter which may make all the difference in this recipe. If you like a stiff, dry drink you may like this. I like dry but the bitterness.........

Well, now that I'm awake from my nap I can review the recipe!----I think this recipe is completely dependant on the champagne you use. Using a brut, it's definitely not sweet so be aware of that. I liked it but don't know that I'd make it again, just not a "knock your socks off" recipe (but a "knock you out" recipe!). :) A great way to use up a bottle of champagne leftover from mimosas at breakfast.

So easy! I halved this recipe and put it in an 11 x 7 pan---worked great. The peanut butter is a must! (even though it is hard to swirl) I will definitely make this again.

Beef Stew with Dumplings

Just had this tonight. Awesome! Even the 2kids (5 and one) finished their bowls! I left out the parsley, gr.pep, and mushrooms. Tasted just like mom's.

Peri Peri African Chicken

I've played around w/ this recipe a couple times now--using less paprika,added black pepper, added honey, etc. It has potential but needs something and the paprika is just too overpowering.

The whole family likes this but we all agree that it's super rich---one scoop is all you want. I don't understand why the little "grains" of chocolate...... We all wish it was smoother.

Berry Bliss Cake

Very good. Used blueberries instead of blackberries for the 4th of July. I used more Cool Whip than called for---I wouldn't do that again. It was very good but difficult to keep upright & cut.

Butternut Squash Pizzas with Rosemary

I feel this would be perfect as an appetizer----cut into small rectangles. I didn't love it as a dinner pizza. I did add bacon as some suggested---glad I did, not sure I would've liked it as much without. The flavors of the squash, rosemary, onions, bacon & cheese are all very distinct, in a great way.

Pepper-Honey Cedar Plank Salmon

It was funny, after reading all the reviews about not being able to get the glaze to thicken (or it taking a much longer time) I ended up overcooking mine---it was so thick and sticky you couldn't get the spoon out of it! :) (Not the recipes fault!) However, next time I am going to make a rub out of the dry ingred. instead and try that. This was the first time I've done any plank cooking. It imparted alot more smoke flavor than I expected.

Country Apple Dumplings

Easy! I would never had tried this recipe due the Mt Dew plus the amount of sugar but the reviews made me! Glad I did! I used one stick of butter (plenty) and 1/2 cup white and 1/2 cup brown sugar (perfect sweetness) with Diet Mt Dew. The whole family loved these! Going into the oven there is ALOT of liquid---don't worry, coming out it has just a small amount of syrup in the bottom of the pan. Nice easy, quick apple dessert---thank you!!!

Potato and Vegetable Frittata

Don't skimp on the spices! And the broiling step is essential---brown that cheese! I used fresh oregano on top after it came out of the broiler and that added alot. This is very good---good enough that it replaced a previous favorite of ours. I substitued spinach for the zucchini, provolone for the other cheeses, omitted the black olives and added a jalapeno. Don't be afraid to add some strong flavors to this.
