Spinach and Rice (Spanakorizo)

I know I probably took this recipe in a completely different direction than intended but it turned out to be a great main dish that the whole family devoured. I used 1/8 c. oil, 1 onion, 1 bag spinach (only 6oz), no spices other than s & p (heavy on the pepper), brown rice and added 1/2 lb. smoked turkey sausage. We all (even the kids) enjoyed it. Served it w/ crusty bread. Yum! Great cold weather food!

Hawaiian Banana Nut Bread

To make this a "healthier" bread I used: whole wheat flour, no oil (used a 20 oz. can of crushed pineapple--not drained to compensate for liquid). I also only had 2 bananas and a few cherries. Very good, moist, flavorful, fun bread. Great!

Chicken, Feta Cheese, and Sun-Dried Tomato Wraps

These are good, however we felt the wheat wraps conflicted w/ the flavor of the filling. (Maybe it was the brand I bought?) Also, for the "dressing" I used 1/4 cup lite Mayo mixed w/ a tablespoon of the bottled sun-dried tomato dressing for something creamier, per another reviewers suggestion. I will try these again with regular white flour wraps and as a cold pasta salad. Thanks! P.S. I just made this again, as a warm pasta salad, and it gets five stars! Whole family loved it.

Easy Shepherd's Pie with Garlic Romano Potatoes

I did not find this "easy." It took me an hour to prepare it plus cooking time. And it was just okay. The romano was a bit overpowering. Have half left over (no one ate much) and am hoping it will be better tomorrow. Won't make this again. Sorry.

Banana Split Cake II

hhmmm...I hate to go against everyone else here but we all (4 adults, 2 kids) thought this was very ho-hum. Did graham cracker crust, added choc syrup on top, even added strawberries. Just nothing exciting. Won't try again. Sorry.

Angel Chicken Pasta

Used 1/2 the amount of chicken, otherwise made as written. Excellent. A tad salty. I recommend not adding salt to your pasta water. Will definitely make again.

Lime Chicken Soft Tacos

Brick-Oven Pizza (Brooklyn Style)

Used half whole wheat flour in the dough. Used fresh tomatoes and canned--both were great. My pizza stone did not like being preheated that hot so had to do things a little different but was excellent and will make again!

Roasted Potatoes with Greens

Wonderful! Used a dried rosemary/herb mix and forgot to add the parmesan at the end--didn't miss it. Cooked potatoes an extra 10 minutes. Will absolutely make again & again.

O my goodness---this is fabulous! Per other reviewers suggestions I only used 1/4 cup olive oil and that was perfect. Added a little salt & pepper and some chicken breasts marinated in italian dressing and grilled. Will definitely make again & again. Thanks for this super easy recipe!
