Oven Fresh Seasoned Potato Wedges

Reviewed: Aug. 6, 2009
I used red potatoes cut into chunks. Cooked more like 35 min. OMG! These are wonderful! They stuck to the pan but that was actually a good thing. The part that stuck was crunchy (not burnt) and the parmesan cheese (fresh, grated) browned--the bottom of the chunks were the tastiest. I won't spray the pan next time either. And there will be plenty of "next times." Thanks!

Low-Fat Blueberry Bran Muffins

Reviewed: Aug. 3, 2009
Just like the reviews I read, these really are great muffins that don't taste "healthy." I too, subbed a banana for the applesauce. Thanks for the post!

Roasted Red Pepper Cream Sauce

Reviewed: Jul. 30, 2009
I made two sauces last night, this one and a pesto from this site. They were both wonderful but this one was the winner. I omitted the butter and the cheese and didn't miss them. It was excellent! So much flavor! Will definitely make again. Thanks!

Blackened Tilapia with Secret Hobo Spices

Reviewed: Jul. 29, 2009
I followed the suggestions in the review by "walela" and we all enjoyed it. Bought the jar of blackening spices, cooked outside (due to another reviewers suggestions because of the smoke) in a cast iron skillet. Very easy and spicy without being too hot. Will make again.

Easy Pesto

Reviewed: Jul. 27, 2009
This was my first attempt at making pesto. Great base recipe. I doubled the garlic, halved the oil and added lemon juice. The garlic & oil are definitely personal flavor preferences but I think the lemon juice is essential. I will use this recipe every year I expect. Thanks.

Chipotle Shrimp Tacos

Reviewed: Jul. 27, 2009
We had high hopes for this recipe, given the great reviews, but thought it was just okay. The spiciness & heat of the chipotle WAY overpowers every other flavor in the recipe. Once in a while you got a hint of bacon or a hint of shrimp but mostly you just tasted the chipotle. Too strong of a spice for the delicate flavor of the shrimp IMO. Sorry.

Warm Mediterranean Farro Salad

Reviewed: Jul. 21, 2009
Used brown rice instead of farro because I couldn't find farro, worked great. Used feta in place of the ricotta. I thought this was very good but my family didn't like it at all.

Wild Rice Salad

Reviewed: Jul. 21, 2009
Needs more mayo. I didn't measure but I probably doubled the mayo and it was definitely not "wet." The cashews are great in this. We did not like the water chestnuts. Could use a little salt and more grapes. Good.

Rosemary Ranch Chicken Kabobs

Reviewed: Jul. 7, 2009
These are really good and very moist. I only used half the amount of oil and it was plenty. I used dried rosemary and I think that using fresh probably puts this recipe in the 5 star category. Thanks!

Fava Bean Breakfast Spread

Reviewed: Jun. 29, 2009
I followed the "muslim mom" reviewers suggestions. Hot, with a poached egg on top for breakfast was good but later in the day, room temp with warm toasted pita wedges---yum! I thought it would be more filling..... Love the lemon flavor.

Grilled Tilapia with Mango Salsa

Reviewed: Jun. 8, 2009
THE BEST fish dish I have made! Even my husband, who doesn't really like fish, liked it. I doubled the recipe, everything except the olive oil in the marinade. I didn't even use the 1/3 cup. Can't wait to make this again! Thanks!

Walnut Raisin Scones

Reviewed: May 11, 2009
I am not hugely into sweets but this recipe needs more sugar or honey or something. There is no sweetness to it at all. They are pretty good served warm with alot of honey but I far prefer "Grandma Johnson's Scones" recipe from this site.

Italian Pesto Pizza

Reviewed: May 7, 2009
This is good but not five stars for us. I did not use the fresh herbs because I felt the pesto would add enough flavor. It is salty, but not too extreme. I topped it w/ fresh tomatoes after it cooled a bit---excellent addition.

Chipotle Crusted Pork Tenderloin

Reviewed: Apr. 24, 2009
I used only 1 tablespoon of the chipotle powder (otherwise followed it as written) and we all thought it was perfect. My five year old even loved it. Thanks for a new summer grillin' recipe!

Wilted Spinach with Cherries and Goat Cheese

Reviewed: Oct. 1, 2008
I loved this, my family did not. My kids didn't try it and my husband, who was excited to try it thinking it was something he would enjoy, wouldn't eat it. I would make it again for myself and the only thing I might add would be toasted walnuts.

Oatmeal Carmelitas

Reviewed: Jul. 22, 2008
I doubled everything for a 9 x 13 pan. The only thing I will do different next time is not double the butter. I thought there was way more than needed. Thanks for a great recipe!

Best Ever Party Appetizer

Reviewed: Jul. 7, 2008
This is the best! I just crumbled the cheese and used chopped garlic. Gave everything a stir before putting it in the fridge and served w/ toated slices of french bread. OMG--yum! Next time I will take it out of the frig at least an hour before serving. Room temp. would be even better. Thanks so much. BTW, I used goat cheese from Wal-Mart (never have before, always bought the "good" stuff), it was great, couldn't tell the difference in this recipe.
