Orange Gelatin Salad

This was really good! I just love fruit and cream salads with cottage cheese! I think this recipe lend itself really nicely to a lot of substitution too. I used a soy-based 'whipping cream' b/c we don't have Cool Whip in the UK and you couldn't tell the difference, flavour-wise. I also didn't have canned mandarin orages, so I used canned peaches and some fresh fruit I had on hand to make it healthier (blueberries, diced apples and bananas) plus I added some chopped pecans b/c I love nuts. I only gave it four stars because I think in the future, I might not use the jello. My husband thought it made it taste too artificial, but I really liked it. Anyhow, it was yummy...I can't stop eating it! Thanks!

Apple-Banana Oatmeal

This is awesome! I don't know why it hasn't been rated yet, but I thought the combination of juicy raisins, sweet bananas and apple with the oatmeal was really yummy! And most importantly, my 3 yr old (fussy) daughter loved it too and gulped it down. I made some changes, only out of necessity - I used wheat germ instead of oat bran, I eliminated the OJ b/c I wanted to use milk for extra calcium, used gala apples, and a ripe banana. The banana was nice b/c it ended up mashed which gave the oatmeal a pudding-like consistancy, which was nice. I topped the oatmeal with chopped pecans and more milk - so delicious! And the banana I used was so sweet that I didn't even need to add any sugar. Thanks for this recipe!!

Hamburger Soup I

This is a great basic recipe that lets you play around with the ingredients a bit. I made some adjustments that my family absolutely loved - even my very fussy 3 yr old. I omitted the ketchup and basil, as I'm not really fond of basil combined with beef. I instead added a dash of worchestershire sauce, 1 bay leaf, 1 tbsp dried oregano, plus some about 2 tbsps chopped fresh parsely. Additionally, for flavor, I included 2 finely diced garlic cloves and a 1/2 cup of barley. I think the barley really makes this soup really hearty and tasty, not to mention nutritious! You just add the barley in at the beginning with all the other ingredients and you're ready for a great, cozy winter meal!

Broccoli Chicken Casserole I

This is why we all have cupboards! Great recipe that is very forgiving and allows you to use whatever you have on hand for a very quick, easy dinner. I made adjustments out of neccesity: I used 1 can condensed cream of chicken soup, 1/2 cup of milk & 1/2 cup sour cream (I omitted the mayo as well) 1 cup frozen mushrooms, 1/2 frozen peas, 1/2 cup diced carrots, 2 tbsps chopped garlic, 1 tsp dried Italian seasoning, 1 tsp onion pwdr, 1/2 cup shredded cheddar and topped it all w/1 cup crushed Ritz crackers. On advice from other reviewers, I also mixed everything together and topped w/the crackers. It came out very good and was well recieved by my picky 2 yr old! Thanks for sharing!

Crispy Herb Baked Chicken

Not the best breading, in my opinion. It was fairly bland w/o the added seasonings & mine came out a bit soggy - just like eating mashed potato covered chicken! I even put some bread crumbs in it and put it back in the oven, for a bit longer, and then it was ok at best. Won't be making this again.

Poulet Parisienne

Good base recipe - I loved the addition of the sherry in this yummy sauce, but as other reviews have noted, the recipe is a bit bland as it is. I added about 1 tsp Herb de Provence, about 1/4 tsp garlic & onion powders & used double the amount of (frozen) mushrooms required. With those additions, this recipe was delicious. I served it with fresh green beans, which I steamed for 5 minutes then sauteed in a pan w/thinly sliced red onion, pancetta cubes & a splash of balsamic vinegar) & white buttered rice - a spectacular meal in no time at all! Thanks for the inspiration w/this recipe!

Prosciutto Wrapped Asparagus

I rarely give 5 stars, but this is just the best! It simple, fresh, elegant enough for company and so delicious. My husband loves asparagus and although I'm not crazy about it, I loved it in this recipe. Thanks for this!

Beef 'n' Cheese Macaroni

I gave this 4 stars for simplicity & for being able to use staples in the cupboard. But, it was rather bland, so I did as the other reviewers suggested and made lots of changes. I added dried minced garlic, onion powder, a dash of taco seasoning, canned chopped tomatoes and some oregano. After the meat browned, I added the tomatoes & some finely chopped carrot to make it even healthier. I simmered all the above meat, tomato sauce, spices mixture for about 20 minutes or until the carrot was tender. As I didn't have Velveeta (they don't sell it in England) I just stirred in a small knob of butter and about 3/4 cup of grated cheddar cheese & it came out very yummy! Even my husband who doesn't usually like the dishes I make for our 2 year old, went back for 2nds! Oh, at the end I added dash Worchestershire sauce for just a little extra flavor. Very fast & easy standby recipe.

Breakfast Bundles

These are fantastic! I was sceptical at first about cookies w/bacon in them, but they came out very great. I made some changes for health reasons. I replaced the all-purpose flour with 1 cup of whole wheat flour + 1/2 cup of ground oatmeal (just put rolled oats in a food processor until fine). I only used 1/2 cup of unrefined sugar instead of 2/3 cup white sugar and used packaged cubed pancetta instead of crumbled bacon to make this even quicker. I loved the grapenuts addition - gave it a nice crunch! Overall, a true winner that will go on permanent rotation! The texture reminded me of a scone - great w/coffee!

Chocolate Cornstarch Pudding

The flavor of this pudding was really good, exactly what I was looking for but my pudding came out a bit soupy. It could have been my mistake b.c I've never made this before, but next time I will reduce the amount of milk by 1/4 cup and see if that does the trick! Thanks!

Louisiana Sweet Potato Pancakes

I loved these pancakes, but unfortuanatly, my 2 yr old didn't. The only complaint I have is that they didn't seem to cook in the middle, no matter how long I kept them on the griddle, but that could be due to a mistake by me. Thanks for this healthy creative twist on pancakes!

Health Nut Blueberry Muffins

Excellent recipe! Just what I was looking for. I did make some changes out of necessity, but the basic list ingredients are fantastic. Since I only had 3/4 cup of buttermilk, I added some sour cream to make up the rest, I used applesauce in place of mashed bananas, because I was out and also doubled up on the wheat germ again b/c I didn't have oat bran, but it still came out perfectly. The muffin is light and moist and not too sweet. Fantastic as a quick breakfast on the go! Thanks!

Pumpkin Wheat Honey Muffins

Loved this recipe - the muffin was so tender and light that you wouldn't even know it wasn't white flour! This recipe was so easy that my 2 year old daughter was able to help me with it and she and I devoured them afterwards. I loved the idea of soaking the raisins to make thm softer too, it really added a nice texture. Again, I made only a few changes out of necessity. I added 1/2 tsp cinnamon, 1/4 tsp ground cloves and 1/4 tsp ground nutmeg b/c I didn't have the pumpkin pie spice, and I used spelt flour and pecans b/c that's what I had on hand. But the recipe is so easy that I decided to make 3 more batches and give them to neighbors as gifts! Thank you so much for this fabulous recipe!

Oatmeal Blueberry Muffins

Fabulous! Thank you for this yummy healthy recipe. The only change I made was to add a 1/2 tsp of vanilla, but otherwise perfect and so quick and easy. My 2 yr old daughter loved them - without additional sugar. This is exactly what I was looking for, but like the other reviewers said, if you're looking for something more like a supersweet box recipe, this is not the muffin recipe for you.

Persian Fesenjun

I was really excited to find this recipe as I love Middle Eastern food, but when I made this it was terrible. I had guests over and wanted to make them something special, but it was a disaster. However, I do have to admit that I didn't have as much walnuts as was called for, but the pomegranate paste was just so overpowering I can't imagine that it would have mattered that much. The dish was so tart, that you couldn't really taste anything else. Anyhow, I won't be trying this again, sorry.
