French Beef Stew

Outstanding. Put a big smile on the wife's face!!! Used very precisely trimmed venison, salt n pepper flour sautéed in olive oil with fresh garlic cloves. Be careful to not over cook. Added small amount of bay leaf, thyme, red wine and oregano. Also added mushrooms. Forgive me but had to put a southern twist and serve over rice.

Stroganoff

Made some changes of course. Sautéed beef tips in small amount of olive oil and did not drain. After adding flour and other ingredients had to add touch of milk and it really made a nice gravy. Added less sour cream. Also added small amount of fresh mushrooms. Really good and quick!

Restaurant-Style Prime Rib Roast

Followed the directions to the tee and it came out perfectly. Definitely resonate the point about letting the roast reach room temp. Raising it from the bottom of the roast pan was another excellent tip. Color was nice, just enough spice for true meat lovers. By far the most juicy roast I've ever made. Big hit with family. Don't understand what the fuss was over

Duck Breasts with Raspberry Sauce

Amazing! Hit with everyone. We cheated and used a raspberry preserve heated up. Just a heads up, tried it the second time with skinless breast meat and it ruined the texture.

Mom's Nova Scotia Seafood Chowder

Totally Awesome!!! Hit with everyone in the house. My son asked why I have never made this in his life time before, HA. Improvised a little; oysters instead of scallops/clams; purple onions, celery and corn for color; used condensed milk for the half-n-half.
