Spicy Mexican Torte

My very picky husband loved this! Since he does not like red peppers, I instead did that layer with fat free refried black beans and thin slices of tomato. Wonderful in outr opinion. When my brother made this the next time, he added jalapenos instead of the green chilies to make it hotter.

Noodles Romanoff

I used the 2/3 cup sour cream as mentioned earlier and used fresh garden green onions instead of chives. This was easy, fast, and my family loved it. We ate it as a compliment to a veggie meal that included corn, green beans, and carrots. I will be making it again.

Dog Treats II

I helped my 4 yr old make this for our friends dogs. We rolled it out and cut with cookie cutters. My son loved making it and our friends all asked for the recipe saying their dogs loved the treats!

Applesauce Barbeque Sauce

My husband and 5 yr old son LOVE this barbeque sauce! It is the first bbq sauce I have made or bought they would eat. It is sweet, but that is alright by us. I did reduce the amount of brown sugar by 1/2 cup (but only because I ran out) and used all natural unsweetened applesauce because that is all I buy. After making it, I put it in the frig overnight then added to shredded pork in the crock pot. The smell was wonderful, great smooth texture, and family pleasing taste. Add easy to prepare and this is a winner for me.

Slow Cooker Lasagna

Almost identical to my oven lasagna recipe so I loved the flavor. Took some extra time for planning and browning the meat so not exactly a "throw it in and leave" recipe. Also works best in a long oval crock pot. When I made it in the tall round one, it took longer and made a too thick lasagna that did not come out in clean cuts for picture perfect squares.

Quick Black Beans and Rice

This had ok flavor but did not go over well at our home. Too much rice, too bland of flavor, and the texture all seemed mushy. Even when we put salsa on top and added a salad, we did not like this. Not something I will make again.

Pat's Baked Beans

great flavor, easy to make. It does make a bunch but that is good for pot lucks or large gatherings. I froze leftovers and reheated later. They were still wonderful and my family enjoyed them just as much as the first time.

Taco Seasoning I

I used less salt (table salt) and ground red pepper. Wonderful flavor. A definate keeper that pleased my picky family. It is good on chicken, beef, or venison. I also increased the recipe to keep the mix ready in a jar.

Extra Easy Hummus

Wonderfully easy! Even my 5 yr old could help. I made this with 2 tsp cumin (we like the flavor), doubled the garlic, and added paprika and lemon juice as suggested by others. I liked it blander as written but my family liked it spicier. Wonderful flavor either way depending on your tates. I do recommend you taste it after mixing it as listed to see what you would like. Also, Add bean liquids carefully. One can I used had so many beans that it took all of the remaining liquid to get the consistency I wanted. The next can of the same brand had fewer beans I guess. I added all the liquid at once and the consistency was much thinner. Even better the next day after being refrigerated.

Red Enchilada Sauce

Authentic or not, it does taste like the Mexican restaurant near-by. My family likes te flavor so it has become a regularly used recipe. When I want it thicker I use tomato paste or puree instead of tomato sauce and will reduce the water by 1/2 cup or so. I also use home made salsa when possible. You may need to play around with spices to get your personal taste.

New England Bean Dip

We have never eaten this as a dip. My dad learned to make this from his dad who learned to make in WW2. We have always eaten it as a bean salad side dish. To make it more filling, diced boiled egg has been added at times. We have also done this with canned pinto beans for a slightly different color and flavor. And we have doubled the recipe with half kidney and half pinto beans. You may have to experiment with relish. The wrong kind can make this too salty or too sweet. I usually leave it out of mine.

Heather's Cilantro, Black Bean, and Corn Salsa

Easy and inexpensive. I took this to a potluck and several people asked for the recipe. I have also made it without avocado (when I couldn't find good fresh ones) and it still tastes delicious. Substituting lemon juice for lime juice gives a different, yet still good flavor as well.

Grandma's Cherry Salad

Easiest salad I have ever made! It is always a hit at potluck dinners as well. I now keep the ingredients on hand for a fast dessert. Sometimes I will use one larger can of cherry pie filling (or one with more cherries) with 2 cans of fruit cocktail.

Chocolate Chocolate Chip Cookies I

Fair winner! My 9yo son made these as written and entered them in the county fair. He won best chocolate chip cookie, and was a finalist for best of show out of all children's cooking entries received. We lvoed eating the left overs later. Plus, since he only had to enter 6 cookies per recipe, we froze half of the dough. It thawed and cooked just fine weeks later.

Garlicky Beet Delight

I liked them ok (although not a beet lover) but my family didn't like them at all. My husband found them too oily. So I made them a second time with less oil and then they were too garlicky.

Italian Peas

I loved these, and found them even better the next day as leftovers. I sometimes use the bags of microwave steamable peas and then add in other ingredients. My family however did not like the recipe which is why I only gave 4 stars.

Jay's Signature Pizza Crust

Very easy to make in a short amount of time which is a bonus for this busy mom of a toddler. The first time I made it just as the recipe said and it was wonderful. The second time I added Italian seasoning and garlic powder and it was a huge hit with the rest of the family. We found it so much more filling than store bought doughs. Even reheated the next day the dough was tender and tasty. We will definately be using this recipe on a regular basis.

Very easy to make but it is very sweet and rich. My 10yo son made this and entered it into our county fair. He won first place so we think it is a winning recipe. Next time we will either use less sugar or leave out the marshmallows.

Slow Cooker Chicken Taco Soup

Mde this with homemade chicken broth instead of beer and it was wonderful. My sn and husband ask for this weekly even though they both claim they don't like soups. I have used all sorts of beans and it is always good. If I don't have chili beans I will add a bit of chili powder to taste.
