Franks and Corn Bread

Not exactly what I crave but good nonetheless. We will make this more often as it was cheap and a crowd pleaser. I cut the hot dogs into coins, added onion powder and garlic powder to taste, and a couple tablespoons of molasses for a deeper taste. Minced onions would have added flavor and texture as well but of course I was out.

Red River Beef Stroganoff

Doubled the broth, and spices accordingly. Sometimes use onion powder instead of sliced onions. Now a family favorite.

Spinach Lentil Soup

I loved it, family didn't, but that didn't suprise me. Sour cream or yogurt on top adds depth. I served mine over leftover rice for additional texture and that is how it is preferred by my family. I think it would be great over noodles as well.

Chicken Satay

Wonderful! loved by all family members. Took the advice of others and made slight modifications - 1/3 c soy sauce, 1/3 cup lemon juice (from concentrate here), and 1 tbsp curry, extra garlic. Used red curry paste instead of powder. Doubled the marinade and peanut butter. Peanut butter was the kind with honey (accidental purchase) but it gave an extra sweetness. Marinade was thick and rich so I left it on the chicken as I skewered it. Only marinated 30 min, broiled in oven 5min each side, still wonderful. Made extra marinade for veggie dip and kids couldn't eat enough raw carrots, celery, broccoli. Will definately make over and over.

Whole Egg Mayonnaise

Absolutely wonderful! I ran out of store bought mayo and didn't have the time or money to purchase more. Following this recipe I made a substitution so great that we will probably never buy more form the store again. I used a blender and slowly added oil until it stopped blending it in. It was about 1 1/4 cups oil used. The mayo was thick, rich, creamy, and wonderful tasting. I look forward to adding other flavors in as suggested by others

Country-Style Steak

I can't say anything bad! So very easy to assemble and cook. I did make 2x the gravy for potatoes and it was all eaten as well. The meat was fork cutting tender and very flavorful. After the first hour I had to leave home. I turned off the oven and let it sit there until I came back about 1.5 hrs later. Absolutely wonderful! My son asked me to make it again tomorrow!

German Potato Pancakes

Red Cabbage Salad II

I made it as written the first time and the vinegar was just way too much for my family. The vinegar seemed to get stronger as each day passed - and I love red wine vinegar, just not here. The next time I made it I cut back the vinegar a great deal, and made other adjustments as suggested by others reducing the oil as well and adding carrots. Lovely colors but the family still gives it a thumbs down.

Cake Mix Cookies IV

I have made this recipe several times with my kids because it is so very simple. For the cookie to have flavor, you need to buy a mix with flavor. Chocolate is our favorite but we have also enjoyed lemon, orange, funfetti, and strawberry. If you are using a white or yellow cake mix, those don't have any flavor as a cake and therefore won't have any as a cookie. If I don't have a flavorful mix on hand, I will add lemon juice, or peppermint extract, or some other flavor agent so that the cookie will not be bland. I have also noticed that some of the cheaper mixes don't make as nice of a cookie compared to some of the more expensive mixes, particularly where taste is concerned. Once I make the dough I sometimes roll it into a log and refrigerate for an hour or so. Once the roll is cold it is easy to slice in even 1/4 inch circles for baking. . Sometimes I will roll in sugar, nuts, or coconut for added flavor and texture before baking. You need to watch while baking as these seem to brown quickly at the end and can be easily overcooked.

Easy Fried Eggplant

Easy recipe. Since the eggplant soaks oil up like crazy I made my second batch with spray oils instead and reapplied with each pan full. The flavor was just as good and the eggplant was not as oily. My family preferred it with italian seasoning in the bread crumbs rather than with plain ones.

Slow Cooker Chicken Taco Soup

Mde this with homemade chicken broth instead of beer and it was wonderful. My sn and husband ask for this weekly even though they both claim they don't like soups. I have used all sorts of beans and it is always good. If I don't have chili beans I will add a bit of chili powder to taste.

Dr. Pepper Cake

Very easy to make but it is very sweet and rich. My 10yo son made this and entered it into our county fair. He won first place so we think it is a winning recipe. Next time we will either use less sugar or leave out the marshmallows.

Jay's Signature Pizza Crust

Very easy to make in a short amount of time which is a bonus for this busy mom of a toddler. The first time I made it just as the recipe said and it was wonderful. The second time I added Italian seasoning and garlic powder and it was a huge hit with the rest of the family. We found it so much more filling than store bought doughs. Even reheated the next day the dough was tender and tasty. We will definately be using this recipe on a regular basis.

Italian Peas

I loved these, and found them even better the next day as leftovers. I sometimes use the bags of microwave steamable peas and then add in other ingredients. My family however did not like the recipe which is why I only gave 4 stars.

Garlicky Beet Delight

I liked them ok (although not a beet lover) but my family didn't like them at all. My husband found them too oily. So I made them a second time with less oil and then they were too garlicky.

Chocolate Chocolate Chip Cookies I

Fair winner! My 9yo son made these as written and entered them in the county fair. He won best chocolate chip cookie, and was a finalist for best of show out of all children's cooking entries received. We lvoed eating the left overs later. Plus, since he only had to enter 6 cookies per recipe, we froze half of the dough. It thawed and cooked just fine weeks later.
