Gourmet Sweet Potato Classic

Just cooked this for christmas dinner. Usually people are fighting over my pancetta pan roasted potatoes and turkey, but today everyone was gong back for more of these sweet potatoes. Only difference was that I used a cinnamon spiced pecans for the topping, which added a nice spicy complement to the sweetness of the dish.

Chicken Tikka Masala

Excellent recipe. I made several adaptations- marinated the chicken overnight and carefully broiled them due to lack of access to a grill. Additionally i didnt have fresh lemons on hand so omitted the lemon juice. With these modifications this was hailed as better than many restaurant versions. Thanks for the recipe, it will become a favorite in my house.

Jo Jo's Favorite Banana Muffins

This is a fantastic recipe, just the right combination of spices and banana. One suggested alteration for those who are interested: my husband has diabetes and i use half sugar and half splenda, and it works wonderfully, with no loss of flavor!

Grilled Fish Steaks

This is an excellent recipe, though I made a few adjustments. First, I marinated the fish (salmon and mahi mahi) overnight instead of for just one hour. Second I added a tablespoon of ginger and chili paste for a touch more complexity. Both fish were wonderful, I will be sure to use this again and again.
