Nutty Brown Rice Salad

Reviewed: May 29, 2011
Very good recipe. I used pecans instead of almonds and an oil/sugar/vinegar dressing instead of Italian dressing. Love the combination of flavors. Will use this for lunch at work.

Soldiers Kisses

Reviewed: May 12, 2011
Slightly crunchy, lightly sweet-these are great cookies. I used pecans instead of walnuts, adding just a tiny drop of maple extract to compliment the brown sugar. I had planned to use a cookie press, but the ground nuts didn't fit through the tip, so I used a rounded teaspoon as directed.

Great topping. I used Sugar Twin for brown sugar and doubled the nuts.

Original Recipe French Toast

Reviewed: Apr. 19, 2011
A good basic recipe. I used maple extract instead of vanilla and 12-grain bread. The bread had sunflower seeds, which gave a nice crunch. I added (approx) a tablespoon of brown sugar and skipped the syrup, but that's personal taste. Was a little short of bit of the egg mixture, added a tablespoon or so of root beer to the mixture before covering the last piece of bread. It went well with the maple syrup.

Oatmeal Chocolate Chip Cookies I

Reviewed: Apr. 12, 2011
DH raved about these cookies as written. Personally, I'd like about half the amount of chocolate chips and find them too sweet, but it IS a cookie. This is the Toll House recipe with oats substituted for part of the flour. Great idea!

Sausage and Sun-Dried Tomato Quiche

Reviewed: Apr. 5, 2011
DH loved it. I used the Basic Flaky Pie Crust recipe for the crust. Substituted chopped onion for the shallots. Used dried tomato in a package-no oil-and snipped it very fine with kitchen scissors. Used a mix of colby and mozzerella grated cheese because that's what I had. Baked at 350F for 50 minutes in a French White quiche dish, let it set for 10 minutes. Used mild sausage; it was very good.

Basic Flaky Pie Crust

Reviewed: Apr. 5, 2011
Easy and quick I used stick butter and one extra tablespoon iced water. I reserved a little of the flour for rolling out, and had no problems rolling/placing the crust. Baked it at 425 for 8 minutes, then 350 for five per the instructions in my quiche recipe.

Easy and good; we like the Famous Butter Chicken (uses Ritz crackers) better. The kids love it either way.

Chicken Biscuit Pie

Reviewed: Mar. 22, 2011
Simple and good. I used leftover turkey and added poultry seasoning. Baked at 450F for 15 minutes, then left the mixture for another 15 minutes in the hot oven with the oven off and the door open before serving. The biscuits were cooked through. Will double the recipe next time.

White Velvet Cutouts

Reviewed: Mar. 18, 2011
These cookies hold their shape well. They have very little taste and would make a good cookie for decorating. I dipped some in a glaze of Peach Schapps and confectioners sugar. This made them too sweet but my husband enjoyed them. I prefer the taste of a sugar cookie but these held their shape during baking better than any recipe I've used.

A favorite of ours for years. I sometimes add vanilla. We prefer to use crunchy peanut butter, but creamy is good too.
