Zippy and Tangy Turkey Rice Soup

Perfect Turkey

I used the recipe for "out of this world turkey brine" , but only used 1 cup of kosher salt. I followed everything else as the recipe states except I did tent some aluminum foil over. My turkey turned out nice and moist.

Out of this World Turkey Brine

I tried to use an oven bag for my brine, but it just leaked right out. Luckily I had it setting in a container in the sink, so just used that to brine my turkey in. After reading some reviews that said it was too salty, I only used 1 cup of kosher salt and that was fine. My turkey turned out nice and moist after roasting in the oven.

Great Grilled Smoky Vegetables with Avocado and Goat Cheese Crumbles

I put these on the BBQ in a vegetable basket and they were truly smoky! I left them on longer than 5 minutes until tender and periodically stirred them. Instead of the red pepper I used a green one and added asparagus, zucchini, and summer squash.

I left out the 1/4 cup of sugar and didn't miss it. This was good but next time I will leave out the pecans and double the cinnamon and brown sugar.

Pan Fried Whole Trout

I had never fixed trout before and found this recipe to use for some that our friends gave us. The only thing I changed was to fry it in bacon grease because I remember my grandmother fried it that way when I was little. It was so very good with a squeeze of lemon!

Antipasto Salad II

I made this antipasto salad to go with a lasagna and garlic bread dinner. It was the perfect accompaniment. I did cut down on the vinegar to 2 T and added some garlic, sugar and Italian seasoning to the dressing though.

Braised Corned Beef Brisket

I bought an extra corned beef brisket on St. Patty's day when they were on sale to try this recipe later for sandwiches. I was afraid it would be too salty, but was very tasty, tender and easy to slice thin the next day. This made a very good grilled Swiss cheese, mustard and corned beef sandwich.

Veggie Soup with Basil Sauce

This is a very good vegetable soup. I used low sodium soy sauce, and I agree with another reviewer that it could be made with or without the tomato basil sauce, but I like it with better.

The perfect accompaniment for a soup and sandwich lunch! I took the advice of another and baked the buttered sandwich on a cookie sheet in the oven, much easier for me than frying in a pan.

Apricot Lentil Soup

The apricots and lemon juice added a new dimension to lentil soup which was very good. I did use more like a half cup of apricots though and left the tomatoes out.

Honey Wheat Muffins

These might be bland all by themselves, but with butter and preserves they are very good. They went very nice with the apricot lentil soup recipe also from this site. I wanted something with whole grains to combine with the lentils.

Caramelized Chicken Wings

I liked this but cut down on the sugar and still thought it was too sweet. The sauce reminded me of cracker jacks, which isn't bad but too sweet for my taste. I think next time I'll just eliminate the sugar and maybe use a little more honey.
