Easy Broccoli Quiche

This turned out really well, but lost a star because 1 1/2 cups of milk was way too much - I ended up having to drain it out of the quiche before I baked it. Probably just one cup would have been right. And it needed about 5 extra minutes of baking time. Other than that, good. I recommend it.

Pasta Carbonara I

I made this using regular milk for the cream and left the butter out. I'm sure it would have been creamier with those included, but for those who are looking to cut corners with fat and calories, it was still really good without that extra fat.

Barlow's Blackened Catfish

This was really good - of course you need to adjust the spice level to your taste - a little cayenne goes a long way. When you bake it with all that dressing it turns into a nice thick sauce that we really liked over rice and peas.

Banana Pancakes II

If you're craving pancakes but don't have eggs, this is the recipe to use. We like regular egg buttermilk pancakes better, but this was really good. As with any pancake recipe, you need to adjust the milk until you get the consistency you like - in this case we added about 1/4 cup (soy)milk.

Puff Pastry

This recipe is so easy, and great because I don't like to use store-bought puff pastry because of the trans fats. I used this dough to line muffin cups and baked them filled with lemon custard. Next I'll try pie filling.

Best Bruschetta Ever

I used half the olive oil and cheese to top the bread slices, then toasted them in the oven at 350 for about 6 minutes. It made a big difference! Other than that I followed the recipe and it was great.

Apple Butter Bars

Sorry to give a low rating, but these didn't work for me. They fell apart when I cut them and didn't look very appetizing. Still, I gave them 3 stars because they tasted good. So, if you want an appley dessert and don't mind its appearance, I reccomend them, but definitely not for company.

Apple Dip

This tastes just like caramel and took about one minute to make. (and still great with low fat cream cheese). It was great with the apples, and I'm hoping I can think of some more things to put it on.

Pumpkin Spice Muffins

Too much nutmeg and could have used a little more sugar. With those modifications this IS a recipe worth trying. Whole wheat and pumpkin is a great combination. I also had to bake much longer than called for - could have been my oven, but make sure they're ready before you take them out.

Craving Cookies

This is a good recipe for me, since I like to make small batches of cookies (less guilt when we finish the batch in one sitting). Since there are no eggs, this is easy to scale down. These tasted REALLY good and were extremely soft. Next time I'll probably cut the white sugar down by half, because they were a little sweeter than I prefer.

Heather's Healthy Oatmeal Surprises

For a healthier cookie, you really can't tell the difference. I added raisins instead of peanut butter chips, and cut down the sugar by a few tablespoons. I thought these were delicious. I also mixed 1/8 cup decaffeinated instant coffee to 1 tb hot water and put that in the batter. It adds a nice, very subtle flavor.

Spinach Lasagna III

This is a nice recipe. I strongly reccomend: add extra tomato sauce, and do not boil the spinach - it cooks nicely if its just chopped and put in raw. Also, be liberal with the spinach and the garlic. I removed the foil for the last 8 minutes of baking, and liked the result.

Fresh California Salsa

This was great. I think a good tip would be to make sure you chop everything VERY finely - This is the first time I did that for salsa and it really made a difference. The flavors in this were nice - I added some tabasco to increase the spice, and it doesn't seem to need salt (plenty of salt on the chips.) Thanks, Cecelia!

Pizza Dough II

This is great - I've put all kinds of topping combinations on it, and it always turns out a great level of chewiness in the middle and a crispiness on the edges(which Bennett really likes.) One thing I would say though is DEFINITELY add a handful of dried basil to the dough while you're kneading it. It really adds a lot of good flavor.

Pumpkin Cookies VI

Absolutely awesome. They were a little cakey, but in a really good way. ADD EXTRA CINNAMON, or better yet, some PUMPKIN PIE SPICE . . they are incredibly good. We can see how some people would want to increase the baking time, but we like cookies slightly underdone, so this was perfect.

Roasted Garlic Cauliflower

This is soooo good. I ate half right after it was made and liked it, but the next day when I heated the rest up as leftovers the cheese got melty and it was seriously one of the best things ever. I would say DONT skimp on the garlic, as the strong garlic flavor is what makes it so great.

Broccoli with Rigatoni

This is a great, healthy recipe to make if you really like broccoli and want something simple and easy. We added garlic toward the end though, because it seemed like the garlic's flavor was being cooked through - I would recommend either adding garlic to this recipe or not cooking it for any time before adding the broccoli.

We added a teaspoon of sugar as was suggested. There was a strong nutmeg flavor, which Bennett of SUSANANDBENNETT really liked. I added blueberries because we're nuts about bloobs.

Grilled-Salmon Lemon Basil Cream

This recipe was almost perfect - we thought it needed a little extra flavor, like maybe some extra basil or pepper. Otherwise, it was great. I baked the salmon at 400 for 17 minutes, and served it with rice. We definitely recommend it.
