Broccoli Cheese Soup

This is a great recipe. I do make some changes when I make it though. I cut the garlic in half, use twice as much broccoli (usually fresh) and cheese, and use cream in place of the milk if I have it on hand. Makes for a very rich soup but it's a wonderful treat. I usually serve it with a garden salad, and hot crusty bread.

Julia's Easy Slow Cooker Chicken

Well after reading the reviews and suggestions I came up with my own little version and it seemed to satisfy everyone's palate at my house. First I took some flour and added about a teaspoon of sage, some garlic powder, onion powder and just a dash of salt and pepper and dredged the chicken in that before browning it in a skillet for just a minute or two on each side. I also went with the suggestion of using water in place of the milk and only used 3/4 cup with no cornstarch. I cooked it on high for about 2 hours then cooked it on low for about 4-5 hours. The chicken was nice and tender and the potatoes were just right. The only thing I would change in this method is maybe adding some of the seasonings directly to the chicken and letting it sit in the refrigerator overnight so that the meat absorbs the flavors. To me the chicken was kind of bland in the "middle" but everyone else in my household loved it. I don't think I have much choice but to cook it again, but next time I'll do a little more experimenting to infuse the flavors into the meat. Thanks for sharing this recipe.

Chicken Enchiladas II

Well after reading the reviews here, this is what I came up with. I used shredded chicken and added 1 pkg. of taco seasoning and heated thoroughly. Instead of using chile peppers, I used 2 (7 oz.) cans of verde sauce (tomatillo & chiles) along with the Mexican cream of chicken soup that was mentioned in several reviews. I also substituted white onions for the green as I didn't have them on hand and added more cheese. This turned out wonderful although the sauce was quite spicy and hot. Next time I will cut back to 1 can of Verde sauce. I served them with a Mexican Rice recipe I found on here, fresh guacamole and some beans. Everyone was highly impressed and even my picky daughter asked for seconds.

Mexican Rice III

Although I didn't follow the recipe to a tee, it turned out wonderful. I left out the jalapeno (didn't have one) and the cilantro (don't like it) and I was a little concerned it wouldn't taste as good as everyone here had mentioned but not to worry! My entire family enjoyed this side dish and told me to hold on to the recipe.

Kitchen Sink Salad Dressing

Enchilada Sauce

Well this sauce got mixed reviews in my family. My daughters really liked it, hubby said it was ok, and I was very disappointed...maybe because I set my expectations to high? I may try it again and revamp it some like cutting back on the amount of chili powder and using a different brand and adding more cumin.

Sour Cream Coffee Cake III

This was terrific! Very moist, unlike most of the coffee cakes I've had but absolutely a treat. I've made this twice now for potlucks and both times I received rave reviews. Thanks for sharing it.

Easy Guacamole

This is a really good guacamole recipe and so easy to make. The only thing I would change is maybe adding a more cayenne pepper. As suggested in other reviews, I cut back on the salt (about half) and it was plenty salty.

Enchiladas

These were ok, nothing spectacular but a good basis to start with. I added cumin, chili powder and more garlic to give the meat some flavor and mixed some cheese in with the sauce to make it easier to assemble.

Fettuccine Alfredo V

I must have done something wrong or maybe my garlic was not fresh enough because the sauce had a bitter twang to it that wasn't too pleasant. It had a great consistency so I'll try it again next time I make alfredo sauce and taste everything before putting it together.

Cajun Seafood Pasta

My family really enjoyed this, even my daughter who doesn't care for spicy foods. I did follow the suggestions of others and cut the red pepper to 1 tsp. and the salt to 1-1/2 tsp. I also added 2 cloves of minced garlic. The only other change I made was I used chopped fresh chives (2/3 cup) instead of green onions because I couldn't find any that looked good at the store. It was terrific and if I didn't have the kiddos to think about I'd make it full force with the spices to heat it up a little.

Easy Polenta with Tomato Sauce

Well this got mixed reviews at my house but keep in mind none of us had ever tried polenta before. My daughter and I ate the leftovers the following day which in our opinion were better than the night before, definitely more firm. I'm sure we'll be making this again when we want something a little different from the ordinary as a side dish. Thanks for sharing it.

Blueberry Coffee Cake I

Wow this was terrific! I'm don't usually purchase fresh blueberries as I don't care for them but I had find something to do with all of those that my daughter's picked at the Blueberry Patch and this was definitely the route to go. I took it to a potluck brunch and received so many requests for the recipe. Thanks for sharing it!
