Chicken In Sour Cream

We really enjoyed this recipe. I did make a few adjustments as we like lots of gravy. I subbed 2 cans of cream of chicken soup in place of the 1 can of cream of mushroom (husband is allergic to mushrooms) and added a little milk to thin the gravy out some. The dill and lemon juice added just enough bite to make it a very pleasant treat.

Squash Casserole II

I made this for a family gathering and even though I had to substitute wheat club crackers for the butter rounds it turned out really good. Even my teenage daughter who hates squash asked for seconds. Can't wait until my next visit to the farmers market to get more squash.

Tex-Mex Burger with Cajun Mayo

These were really good but next time I make them I'm going to cut down on the Cajun seasoning by at least half and add cayenne pepper as we found them way too salty for our tastes.

Six Can Chicken Tortilla Soup

I made the following changes as suggested by others - Ranch-style beans (undrained) in place of black beans; used roasted chicken in place of the canned; I also added 1/2 can chopped green chili peppers, 1/2 tsp. cayenne pepper, 1 tsp. chili powder and 1/2 tsp. cumin. I also chopped up some avocados and served on top with the cheese. It turned out excellent and even my picky teenager wanted seconds. It sure makes for a quick and easy dinner.

Pork Chops with Apples, Onions, and Sweet Potatoes

My husband and I really enjoyed this. Like other suggested I browned my pork chops and cooked the onions until just softened. I also added a little additional brown sugar and sprinkled with cinnamon. I will definitely be making this again.

Hot Artichoke and Spinach Dip II

I made this for an extended family get together and got rave reviews on it although I didn't care for it. It was a little too sweet for my taste buds but I'm sure I'll make it again and just cut down on the sugar.

Creamy Cajun Shrimp Pasta

For those of you complaining that it has a floury taste it's because you're not cooking the butter/flour mixture long enough. You cook it stirring constantly for 4 to 5 minutes to make a roux. I've made this several times now and have changed it quite a bit, sometimes I'll add chopped green onions cut back on the cajun seasoning and add a tsp. of red pepper flakes. If I happen to have whipping cream on had I will sub 1/2 a cup for 1/2 cup of the milk. I generally add Parmesan cheese near the end of the cooking cycle to add to the richness. It's pretty versatile.

Blueberry Coffee Cake I

Wow this was terrific! I'm don't usually purchase fresh blueberries as I don't care for them but I had find something to do with all of those that my daughter's picked at the Blueberry Patch and this was definitely the route to go. I took it to a potluck brunch and received so many requests for the recipe. Thanks for sharing it!

Easy Polenta with Tomato Sauce

Well this got mixed reviews at my house but keep in mind none of us had ever tried polenta before. My daughter and I ate the leftovers the following day which in our opinion were better than the night before, definitely more firm. I'm sure we'll be making this again when we want something a little different from the ordinary as a side dish. Thanks for sharing it.

Cajun Seafood Pasta

My family really enjoyed this, even my daughter who doesn't care for spicy foods. I did follow the suggestions of others and cut the red pepper to 1 tsp. and the salt to 1-1/2 tsp. I also added 2 cloves of minced garlic. The only other change I made was I used chopped fresh chives (2/3 cup) instead of green onions because I couldn't find any that looked good at the store. It was terrific and if I didn't have the kiddos to think about I'd make it full force with the spices to heat it up a little.
