Smoked Sausage-Potato Hash

This was ok, nothing spectacular but something different. I did end up adding some cayenne pepper and oregano to add some flavor as I thought it was a bit bland. Might make again and play with it to suit our tastes.

Mom's Dill Potato Salad

After making a few minor changes such as adding a little celery seed and increasing the sour cream to 1 cup and decreasing the dillweed to 1-1/2 TBSP, we found this to be a wonderful potato salad.

Dry Rub for Ribs

I tripled this recipes for several racks of ribs and found it to have way too much black pepper. Next time I use it in that quantity I'll scale back the black pepper so that the other flavors can shine through.

Shrimp Cakes

These had a great flavor after some minor adjustments but they seemed incredibly greasy to me. I used less mayo as suggested and added a little cajun seasoning and parsley as well as adding a little Italian breadcrumbs. I did pan-fry (with very little oil) to get them brown and then popped them in the oven to cook through, though I think next time I'll just bake them from the start and try using half the crackers and half breadcrumbs. I might also add an egg to the mix to help bind the ingredients better.

Hudson's Baked Tilapia with Dill Sauce

This was good and incredibly easy to make. I had to add more dill to suit my tastes but overall we enjoyed it. I think next time I make it I won't bother with the added expense of fresh dill as I think dried would work just fine for this dish.

Italian Breaded Pork Chops

These were really good. The only change I made was I added a little garlic powder to the breadcrumbs. I didn't need nearly as much egg wash or breadcrumb mixture as it called for so I'll be cutting back on both of these next time.

Thighs on Rice

I made a few changes such as cutting back to one cube of bouillon and using 2 cups of chicken broth in place of the water. I also omitted the Italian seasoning and used poultry seasoning both in the rice as well as on the chicken. It turned out great and was definitely a change from the ordinary.

Shepherd's Pie VI

After reading all the reviews I came up with this - I browned the ground beef with the chopped onion then added 1 jar of beef gravy and stirred in about a handful of each: frozen corn, green beans, green peas & carrots. I topped with homemade mashed potatoes with very little milk added so they were thick. Then baked as directed. My family really enjoyed it, especially my teenage daughter who hates everything these days.

Simple Sicilian Salad Dressing

I don't know if my balsamic vinegar was bad or what but this just didn't turn out as I expected. Maybe I'll purchase a new bottle and try it again sometime as I can't believe what I had was what got all the rave reviews.

Coconut Shrimp I

These were a big hit around my house. Although a little messy and I used a ton more coconut than called for it was well worth the work and mess. Only thing I'll change next time is I'll gently salt the shrimp before dredging in the flour as I thought they needed it.

Deep Fried Shrimp

I have to agree with everyone else, it was very bland and had way too much egg for my taste. I downsized the recipe by 1/2. After the first batch came out I added more flour and about 1/4 cup cornmeal to cut down on the egg, I also added cajun seasoning to the batter to add some flavor. They were eaten but I think I'll keep searching for something that suits our tastes better.

Meatball Soup

This was a gppd base to start with. I did make several changes such as I added a small amount of chopped onion and sauted that with the celery in some butter. Then I added the garlic (5 cloves...we love garlic) and the sliced carrots and cooked for about 1 minute. To that I added 2 cans of beef broth and enough water to come to 2 quarts. Then the tomato sauce along with a can of diced tomatoes, the beef bouillon cubes, the recommended spices which I also added 1 tsp. Italian seasoning, dash of cayenne pepper, dash of tabasco sauce and a little Worcestershire sauce. Added the meatballs after about 5 minutes. I used rigatoni noodles as I didn't have any macaroni on hand and added a can of corn (drained) when these were added along with a squirt of ketchup for the sweetness. Everyone in my household loved this soup. The only thing I'll do differently next time is add additional carrots, maybe add some frozen green beans and/or diced zucchini for some extra veggies.

Migas II

This was really good to be so simple. I added just a little chopped onion (wish I had added more)when cooking the tortillas. I also scrambled the eggs before putting them in the pan and added a couple of dashes of hot sauce to them. Served them with a spinkle of grated cheese and more hot sauce. My husband really enjoyed them. Next time I'll experiment with a few other items. Maybe some bell pepper, more onions, sausage or chorizo.

Roasted Garlic Cauliflower

This was pretty good. Nothing spectacular but much better than steamed. Of course, I had to bake mine at 350 degrees and about 45 min. because of another dish I was cooking at the time.
