Grandmother's Buttermilk Cornbread

I honestly don't know what all the fuss is about I thought this recipe was ok, though my youngest daughter seemed to like it better than my normal recipe.

Mini Salmon Loaf

This was pretty good. I doubled the recipe to feed my family of 4. It seemed a little dry to me so next time I'll either leave the liquid from the salmon in it or cut down on the bread crumbs. I will definitely be adding some Cajun seasoning and dill to the loaf next time.

Stewed Cabbage

Made the following changes to suit our tastes: chopped and cooked about 6 oz. of bacon before adding the veggies; added an extra can of tomatoes, and seasoned with Cajun seasoning instead of salt. It was really good though next time I'll omit the 2nd can of tomatoes.

Salmon Salad

This was good and really easy. To me it needed something but I couldn't figure out what it was. Maybe I'll be able to tell tomorrow after it has had time for all the flavors to blend. UPDATE - This time I omitted the seasoned salt, increased the dill to 1 tsp. and added a Tbsp. of capers to it and it was delicious.

Cream Corn Like No Other

This was pretty good though definitely not like real cream corn. I think next time I'll cut back on the liquid as it seemed to be too much for my taste.

Texas Hash

This was a lot better than I thought it would be. I did make a few changes such as omitting the bell pepper (didn't have any on hand) added several cloves of minced garlic, small can of green chiles and a dash of cumin & cayenne pepper. Amazingly both my teenage daughters enjoyed it. Next time I'll try adding some black beans as suggested by several people.

Creamy Chicken and Rice

I made a few changes as suggested and this was pretty good. Not bad for a weekday meal as it doesn't take too long to make if you have cooked chicken on hand. The changes I made were as follows: 1 medium onion and 2 celery stalks chopped which I cooked in the melted butter before adding flour. I only used 1 tsp. bouillon but will leave this out completely next time I make it. For additional chicken flavor I added 1 can of cream of chicken and substituted crushed corn flakes in place of the crackers as I didn't have any on hand. Family loved it, I thought it needed something to add to the flavor but not bad overall.

Spaghetti Chicken Casserole

This is a good base but definitely needs some tweaking. This is what I did: I doubled the amount of onions, peppers, and cooked them in a little margarine to soften. Then I used 2 cans of cream of chicken. Subbed chicken stock for the wine and added a can of diced tomatoes, garlic and a dash of cayenne pepper. It was simple enough but not the best chicken spaghetti I have ever had. Will probably make this dish again and use even more peppers, onions and garlic to add more flavor.

Easy and Elegant Pork Tenderloin

This was wonderful. I did add extra Italian seasoning to the bread crumbs along with some garlic powder. Seasoned the pork with salt and pepper before applying crumb mixture. I had 2 pork tenderloin halves. One I added the crumbs as described the other I rubbed with oil and rolled in the crumbs. Both were excellent and I didn't notice a big difference in the end result. I did bake in a foil tent and let it rest for 15 minutes before serving.

Leftover Casserole

My family really enjoyed this with a few changes that I made. I cooked the macaroni first, substituted cream of mushroom for the cream of chicken as that's what I had on hand, added some garlic powder and cayenne pepper, and sprinkled french fried onion rings on top. The only other change I'll make in the future is to saute some onions to mix in to give it a little more taste.

Golden Sweet Cornbread

This was really good though I did have to use 1/2 oil and 1/2 melted bacon grease as I didn't have enough oil on hand. I took the suggestion of others and only used 3 tsp. of baking powder. My teenage daughter loved it. I'll say this was sweet and moist enough to be served as dessert.

Shrimp and Crab Casserole

This was ok. I found myself adding garlic & creole seasoning to give it some flavor. I still thought it was missing something but it was a good base to start with. My family enjoyed it more than I did so I'll probably be making it again but will find additional seasonings to jazz it up a bit.

Buttermilk Biscuits I

These were really easy and delicious. I don't keep self-rising flour around so I made my own (4 cups flour, 2 tsp. salt, 2 Tbsp. baking powder) then followed the directions, though I didn't brush them with buttermilk. The were terrific.

Pie Crust IV

I'm the worst pie crust maker and this is the first recipe that I have tried that I didn't make a mess of. Was easy to roll out without tearing and transferred to the dish beautifully. Thanks for sharing.
