This was definitely a nice change to the ordinary.

Salmon Salad

Reviewed: Apr. 27, 2011
This was good and really easy. To me it needed something but I couldn't figure out what it was. Maybe I'll be able to tell tomorrow after it has had time for all the flavors to blend. UPDATE - This time I omitted the seasoned salt, increased the dill to 1 tsp. and added a Tbsp. of capers to it and it was delicious.

Cream Corn Like No Other

Reviewed: Apr. 6, 2011
This was pretty good though definitely not like real cream corn. I think next time I'll cut back on the liquid as it seemed to be too much for my taste.

Texas Hash

Reviewed: Jan. 18, 2011
This was a lot better than I thought it would be. I did make a few changes such as omitting the bell pepper (didn't have any on hand) added several cloves of minced garlic, small can of green chiles and a dash of cumin & cayenne pepper. Amazingly both my teenage daughters enjoyed it. Next time I'll try adding some black beans as suggested by several people.

Creamy Chicken and Rice

Reviewed: Nov. 4, 2010
I made a few changes as suggested and this was pretty good. Not bad for a weekday meal as it doesn't take too long to make if you have cooked chicken on hand. The changes I made were as follows: 1 medium onion and 2 celery stalks chopped which I cooked in the melted butter before adding flour. I only used 1 tsp. bouillon but will leave this out completely next time I make it. For additional chicken flavor I added 1 can of cream of chicken and substituted crushed corn flakes in place of the crackers as I didn't have any on hand. Family loved it, I thought it needed something to add to the flavor but not bad overall.

Spaghetti Chicken Casserole

Reviewed: Aug. 23, 2010
This is a good base but definitely needs some tweaking. This is what I did: I doubled the amount of onions, peppers, and cooked them in a little margarine to soften. Then I used 2 cans of cream of chicken. Subbed chicken stock for the wine and added a can of diced tomatoes, garlic and a dash of cayenne pepper. It was simple enough but not the best chicken spaghetti I have ever had. Will probably make this dish again and use even more peppers, onions and garlic to add more flavor.

Easy and Elegant Pork Tenderloin

Reviewed: Jan. 20, 2010
This was wonderful. I did add extra Italian seasoning to the bread crumbs along with some garlic powder. Seasoned the pork with salt and pepper before applying crumb mixture. I had 2 pork tenderloin halves. One I added the crumbs as described the other I rubbed with oil and rolled in the crumbs. Both were excellent and I didn't notice a big difference in the end result. I did bake in a foil tent and let it rest for 15 minutes before serving.

Tuna Noodle Casserole from Scratch

Reviewed: Jul. 26, 2009
This was good. I did omit the mushrooms. I thought it could have used a little more sauce so next time I'll increase the milk.

Leftover Casserole

Reviewed: Feb. 7, 2009
My family really enjoyed this with a few changes that I made. I cooked the macaroni first, substituted cream of mushroom for the cream of chicken as that's what I had on hand, added some garlic powder and cayenne pepper, and sprinkled french fried onion rings on top. The only other change I'll make in the future is to saute some onions to mix in to give it a little more taste.

Golden Sweet Cornbread

Reviewed: Jan. 25, 2009
This was really good though I did have to use 1/2 oil and 1/2 melted bacon grease as I didn't have enough oil on hand. I took the suggestion of others and only used 3 tsp. of baking powder. My teenage daughter loved it. I'll say this was sweet and moist enough to be served as dessert.

Shrimp and Crab Casserole

Reviewed: Dec. 2, 2008
This was ok. I found myself adding garlic & creole seasoning to give it some flavor. I still thought it was missing something but it was a good base to start with. My family enjoyed it more than I did so I'll probably be making it again but will find additional seasonings to jazz it up a bit.

Garlic Green Beans

Reviewed: Oct. 16, 2008
This was really good and super easy to make. I thought it could use "something" though I haven't pinpointed what that somethimg might be. Next time I'll experiment with some onion and see how that turns out.

Pork Loin and Cabbage

Reviewed: Oct. 5, 2008
This had a good flavor though the pork was awfully dry and not really tender. I think next time I'll add some chicken broth or other liquid to simmer the meat in.

Buttermilk Biscuits I

Reviewed: Sep. 30, 2008
These were really easy and delicious. I don't keep self-rising flour around so I made my own (4 cups flour, 2 tsp. salt, 2 Tbsp. baking powder) then followed the directions, though I didn't brush them with buttermilk. The were terrific.

Pie Crust IV

I'm the worst pie crust maker and this is the first recipe that I have tried that I didn't make a mess of. Was easy to roll out without tearing and transferred to the dish beautifully. Thanks for sharing.

No-Fuss Chicken

Reviewed: Sep. 2, 2008
We really enjoyed this though I did make a few adjustments, such as added a little minced garlic, added about 1 tsp. of poultry seasoning and increased the sage to 1-1/2 tsp. Like all good slow cooker recipes it does require a little prep work before going into the cooker it's well worth it.

Homesteader Cornbread

Reviewed: Aug. 20, 2008
Maybe it's because I'm a true southern gal but I wasn't that impressed with this cornbread. It wasn't bad it just wasn't as good as I expected with all the great reviews. I think if I make it again I'm going to adjust the amounts of cornmeal and flour and add a little "southern" bacon grease in place of some of the oil. Definitely bake in an iron skillet.

Smoked Sausage and Zucchini Saute

Reviewed: Jul. 24, 2008
After making several changes we really enjoyed this. I added some red pepper flakes to the sausage while it browned. Then I added a small chopped onion, in place of the dried minced onions and 1 clove of garlic with the zucchini. I also poured in a can of diced tomatoes with juice and let it simmer for about 5 minutes. Due to my picky eaters I knew they wouldn't touch the zucchini if it were only sauteed - too crunchy for them.
