Creole Pork Chops

Though good they still seemed to be lacking something even with the following changes that I made. I cooked the vegetables in the oil prior to browning the chops and added 3 or 4 cloves of minced garlic. I also omitted the salt and used Creole seasoning and a dash of cayenne pepper in the flour to liven up the chops. Added an additional 1 Tbsp. of Creole seasoning and a few dashes of cayenne pepper to the tomato mixture. I think next time I make it I'll go with my gut instinct and add a couple of stalks of celery to my onions and pepper and see if that's what was missing.

Bacon Cabbage Stir-Fry

This was pretty good. Probably would have been better had I had some fresh bacon to use. I had to use some stored bacon drippings to fry the cabbage in and then added some real bacon bits that I had on hand. Not bad for something different than regular fried cabbage.

Seafood Gumbo Stock

Wow, this is incredible stock. I omitted the cloves as I didn't have any on hand but you'd never miss them. Used this for my gumbo and want an incredibly nice depth it added. Will definitely be making this one again and again.

Caramel Apple Pork Chops

I followed the directions exactly with the exception of doubling the sauce recipe. I thought they were really good but I think next time I will only brown the pork chops then place them in a casserole dish, pour the sauce and apples on top and bake covered for 20-25 minutes to allow the sauce to thicken around the chops. Loved how fast and easy this recipe was. Great change from the ordinary.

Funnel Cakes

This was really good. I gave it 4 stars due to the fact that I did make a few changes. I added 1 tsp. of vanilla to the egg/milk mixture and also increased the baking powder to 2 tsp.

Cranberry Sauce Chicken II

This was pretty good for a change. It had an Asian flair in my opinion. Only change I made was I added some crushed pepper flakes to give it some zing. Next time I think I'll add additional pepper flakes and maybe a dash of soy sauce.

Garlic Alfredo Tilapia

What a quick easy meal. This is our 2nd time to eat it and we still love it. I use a little extra garlic to suit our tastes and this time I actually cooked the fish in a skillet versus the oven simply because I didn't want to heat up the kitchen when it's 100+ outside. Excellent both ways.

Mini Salmon Loaf

This was pretty good. I doubled the recipe to feed my family of 4. It seemed a little dry to me so next time I'll either leave the liquid from the salmon in it or cut down on the bread crumbs. I will definitely be adding some Cajun seasoning and dill to the loaf next time.

Stewed Cabbage

Made the following changes to suit our tastes: chopped and cooked about 6 oz. of bacon before adding the veggies; added an extra can of tomatoes, and seasoned with Cajun seasoning instead of salt. It was really good though next time I'll omit the 2nd can of tomatoes.

Salmon Salad

This was good and really easy. To me it needed something but I couldn't figure out what it was. Maybe I'll be able to tell tomorrow after it has had time for all the flavors to blend. UPDATE - This time I omitted the seasoned salt, increased the dill to 1 tsp. and added a Tbsp. of capers to it and it was delicious.

Cream Corn Like No Other

Texas Hash

This was a lot better than I thought it would be. I did make a few changes such as omitting the bell pepper (didn't have any on hand) added several cloves of minced garlic, small can of green chiles and a dash of cumin & cayenne pepper. Amazingly both my teenage daughters enjoyed it. Next time I'll try adding some black beans as suggested by several people.

Creamy Chicken and Rice

I made a few changes as suggested and this was pretty good. Not bad for a weekday meal as it doesn't take too long to make if you have cooked chicken on hand. The changes I made were as follows: 1 medium onion and 2 celery stalks chopped which I cooked in the melted butter before adding flour. I only used 1 tsp. bouillon but will leave this out completely next time I make it. For additional chicken flavor I added 1 can of cream of chicken and substituted crushed corn flakes in place of the crackers as I didn't have any on hand. Family loved it, I thought it needed something to add to the flavor but not bad overall.

Spaghetti Chicken Casserole

This is a good base but definitely needs some tweaking. This is what I did: I doubled the amount of onions, peppers, and cooked them in a little margarine to soften. Then I used 2 cans of cream of chicken. Subbed chicken stock for the wine and added a can of diced tomatoes, garlic and a dash of cayenne pepper. It was simple enough but not the best chicken spaghetti I have ever had. Will probably make this dish again and use even more peppers, onions and garlic to add more flavor.

Easy and Elegant Pork Tenderloin

This was wonderful. I did add extra Italian seasoning to the bread crumbs along with some garlic powder. Seasoned the pork with salt and pepper before applying crumb mixture. I had 2 pork tenderloin halves. One I added the crumbs as described the other I rubbed with oil and rolled in the crumbs. Both were excellent and I didn't notice a big difference in the end result. I did bake in a foil tent and let it rest for 15 minutes before serving.
