Delicious Ham and Potato Soup

This was really, really good and so simple to make. Only change I made was I sauteed my onions and celery in a pat of butter before adding the potatoes and ham as I wanted to be sure they were cooked through. I might add carrots to the mix next time if I have them on hand just to add a splash of color.

Peanut Butter Balls II

I gave this 4 stars because I did make some changes. First off I only used 3 cups of Confectioners sugar which in my opinion was more than enough as they were really sweet. I also used 1 sleeve of graham crackers which was all I had on hand and added powdered milk to the mix until the peanut butter mixture was the consistency I wanted. These were wonderful and I will definitely be making them again, though I may cut the sugar to 2 or 2-1/2 cups next time and just add more cracker crumbs and powdered milk so they aren't so sweet. I also recommend making them smaller than 1 inch as they are very rich.

Crustless Spinach Quiche

With a little tweaking to meet our tastes this turned out great. I used 2 cups of Swiss cheese and 1/2 cup of Parmesan cheese in place of the Muenster. I also added some sliced baby bella mushrooms and garlic in with onions and spinach. I didn't notice at the time, but my pkg. of spinach was 12 oz. instead of 10 which was way too much spinach. I think next time I'll either add some additional eggs and bake in a larger dish or cut back on the spinach a bit as I thought it was a little much. Will definitely add another clove of garlic next time as well.

Manicotti Alla Romana

I did make a few tweaks to the recipe such using half ground beef/half Italian sausage and added a little parmesan cheese to the meat mixture, other than that I followed the recipe to a tee. My family seemed to really enjoy it, especially my husband.

Tex-Mex Tilapia

Chicken Chimichangas with Green Sauce

These were ok, I think it was the cream cheese that I didn't care for. I did add some onions and bell peppers to the meat/cheese mixture as I had them on hand and normally add them to my chimis. Might make again but omit the cream cheese or at least cut it in half.

Chicken Zucchini Casserole

This was pretty good. I did make a few changes such as adding 2 ribs of chopped celery, used 1/2 zucchini and 1/2 yellow squash. I then sauted all the veggies in 1/4 cup of the butter until the celery and onion were translucent. Only change I think I'll make next time is cook it for about 30 minutes prior to adding the topping as it got a little too brown for us.

Charleston Shrimp 'n' Gravy

This was really good, as I had 2 lbs. of shrimp I increased the bacon to 5 slices and added 2 ribs of celery to the veggies. I also used Tony's in place of the seasoned salt as we like the heat of it. Those were the only changes I made and those were based on personal tastes. Served over cheesy grits and the entire family enjoyed it.

Curried Cauliflower

This was ok. It was definitely different than anything we'd made before. I did make a few changes based on suggestions and what I had on hand. First I only used 1/2 cup mayo, added a tsp. of curry powder and a dash of cayenne pepper. Had to use cream of celery because that's all I had on hand. I also didn't have any crackers so I used seasoned bread crumbs instead. I will make this again as but will definitely try the cream of chicken and maybe add some other spices as it seemed to be lacking something.

Tropical Pork Chops

UPDATE - I made this again tonight and made the following changes. I doubled the sauce ingredients and added an additional 2 Tbsp. brown sugar. I also added a yellow and red bell pepper to the chops when cooking. This made it incredible and made it much more rounded in flavor. Right before serving I removed the pork chops and thickened the sauce with a cornstarch/water mixture. Excellent! This was very good. I actually followed the recipe to the tee (a first for me) and the only changes I think I'll make next time is to double the sauce and replace the water with the juice from the pineapples. I might even try using crushed pineapple should I not have tidbits on hand.

Slider-Style Mini Burgers

These were really good. They tasted very much like the stroganoff open sandwich I make. I made these for my teenagers New Years Eve party and though our family members enjoyed them several of the teens didn't....thus the 4 rating. I did think they were a little dry, I think next time I will probably add some sour cream to the meat mixture.

Christmas Morning Frittata

This was really good and so easy to make and is an excellent base recipe that is easily adjusted to suit your own tastes. I made several additions to mine such as adding bacon, diced ham, substituted 1 cup of cheddar cheese for 1 cup of mozzarella and added a little freshly grated parmesan as I happened to have it on hand. My husband thought it would be even better with some chopped jalapenos so next time I'll add some when cooking the veggies.
