Best Bread Machine Bread

Reviewed: Jun. 11, 2014
This turned out beautifully though I have to add an additional 1/2 cup of flour like all other bread recipes due to my bread machine. My hubby loves this bread for his sandwiches. Thanks for sharing.

Honey Wheat Sandwich Rolls

Reviewed: Jan. 21, 2014
These were really good though they were a little sweet to me. Next time I may add a little more salt or cut back on the honey a bit to even them out.

Ground Beef Curly Noodle

Reviewed: Jan. 14, 2014
Not bad, much better than expected. I did add 1 cup of finely chopped onion while browning the meat, used 2 pkgs. of noodles and 1-1/2 pkgs. of the seasoning, added 1 can of peas/carrots though next time I'll cut that back to 1/2 a can. I felt it could have used additional seasonings maybe some hot peppers of some kind.

This was absolutely wonderful! My entire family loved it and it was so simple to make. Followed recipe to a tee and wouldn't change a thing.

Grilled Leftover Ham and Pineapple Sandwiches

Reviewed: Dec. 2, 2013
After reading the reviews, I made several changes to adapt the sandwiches to our own tastes. I used soft cream cheese with chives and smeared it on dark Rye bread, then I put on a layer of crushed pineapple which is all I had on hand, sprinkled just a little Worcestershire sauce on that. Next the ham, sprinkled a little sharp cheddar cheese and spread a thin layer of Dijon mustard on the other piece of bread. Grilled until toasted and cheese was melted. Not bad and I think the mustard and Worcestershire sauce gave it a nice depth in flavor. Not the best sandwich I've ever had but it's a nice change when you have lots of ham leftover.

Hot Cranberry Tea

Reviewed: Nov. 23, 2013
I've been looking for this recipe for years and am so excited to finally find it. I had it at a school Christmas function when my daughter was young and failed to get the recipe from the woman who brought it. I didn't have any whole cloves on hand so I put a couple of dashes of ground cloves in it. It was absolutely wonderful, though my husband asked for me to add another 1/2 cup of sugar to it which I didn't think it needed. Thanks for sharing this with us.

French Baguettes

Reviewed: Nov. 22, 2013
This was really good bread, but the first batch was really sticky when getting it out of the bread machine. So like every other bread I've mixed/made in my bread machine my second batch got an additional 1/2 cup of flour and it turned out beautifully. Both batches tasted wonderful just the first didn't rise quite as well as the 2nd.

Delicious Chicken Casserole

Reviewed: Nov. 20, 2013
First off let me say this is a great base casserole. That being said I gave it 4 stars as for our tastes I needed to do quite a bit of tweaking to it. First, I chopped 1/2 cup of onion and celery and cooked those in 2 Tbsp. butter until tender. I added these to the soup mixture. I interpreted the recipe to actually call for 1 cup uncooked rice, meaning I actually used 2 cups of cooked rice. I omitted the onion powder and added about 1 tsp. poultry seasoning which really helped the taste a lot.

Cranberry Nut Bread I

Reviewed: Nov. 20, 2013
I gave it 4 stars since I made several changes. First I increased the berries to 1-1/2 cups and left them whole. Next I added an additional egg and 3 Tbsp. of sour cream as several people commented the bread was dry and/or crumbly. I also increase the sugar by 1/4 cup. I made an orange/powdered sugar drizzle to go on top. Wow, what a wonderful treat, hubby and I had 2 slices for breakfast when it came out of the oven. Definitely a keeper for the holiday season.

Freezer Caramel Drizzle Pie

Reviewed: Sep. 2, 2013
I was searching for this pie recipe after trying at a restaurant in St. Croix. This was definitely the pie though I don't think they used quite so much caramel sauce on theirs. This was extremely rich and really good though next time I think I'll use half as much caramel and maybe sprinkle some of the pecan/coconut mixture in the middle layer. I might even drizzle a very small amount of chocolate sauce on the top layer.

Southwest Chicken

Reviewed: Jun. 19, 2013
I'm giving this 4 stars instead of 5 due to fact that I had to tweak it a little to suit our tastes. The changes I made included adding a can of green chiles, adding 1 Tbsp. of chili powder and used about 1 to 1-1/2 tsp. cumin instead of the pinch as called for. These few additions seemed to make a world of difference, at least for our family it did.

French Dip Sandwiches

Reviewed: Jun. 19, 2013
This was really good though we thought the rosemary was a bit strong. The only change I made was I added a can of beef consomme in place of some of the water to give it a richer beef flavor. Served on hot french rolls with a slice of Provolone cheese and served with a Ramen Broccoli salad. Loved the fact that I could prepare it without heating up the kitchen during these hot summer days.

Herb Roasted Pork

Reviewed: Mar. 26, 2013
Very nice. I did use more of the rub ingredients than the recipe called for but I wanted a depth to the flavor. I also let the pork loin rest for about an hour after applying the rub. I really enjoyed the tangy sauce.

Fluffy Biscuits

Reviewed: Mar. 3, 2013
These were good though I like buttermilk biscuits a little better. They were fluffy, easy to make and ever tender. I did double the recipe when I made them and used 1/2 cup butter and 1/2 cup shortening.

E-Z Drop Biscuits

Reviewed: Feb. 11, 2013
These were pretty good and definitely easy. I doubled the recipe and increased the salt by 1/4 tsp. and yet still thought they were a little bland. Also, they were quite crumbly but I'm thinking that may have to do with doubling the recipe, next time I do I'll cut back a little on the baking powder and cream of tartar.

Delicious Ham and Potato Soup

Reviewed: Jan. 1, 2013
This was really, really good and so simple to make. Only change I made was I sauteed my onions and celery in a pat of butter before adding the potatoes and ham as I wanted to be sure they were cooked through. I might add carrots to the mix next time if I have them on hand just to add a splash of color.

Peanut Butter Balls II

Reviewed: Dec. 27, 2012
I gave this 4 stars because I did make some changes. First off I only used 3 cups of Confectioners sugar which in my opinion was more than enough as they were really sweet. I also used 1 sleeve of graham crackers which was all I had on hand and added powdered milk to the mix until the peanut butter mixture was the consistency I wanted. These were wonderful and I will definitely be making them again, though I may cut the sugar to 2 or 2-1/2 cups next time and just add more cracker crumbs and powdered milk so they aren't so sweet. I also recommend making them smaller than 1 inch as they are very rich.

Crustless Spinach Quiche

Reviewed: Dec. 27, 2012
With a little tweaking to meet our tastes this turned out great. I used 2 cups of Swiss cheese and 1/2 cup of Parmesan cheese in place of the Muenster. I also added some sliced baby bella mushrooms and garlic in with onions and spinach. I didn't notice at the time, but my pkg. of spinach was 12 oz. instead of 10 which was way too much spinach. I think next time I'll either add some additional eggs and bake in a larger dish or cut back on the spinach a bit as I thought it was a little much. Will definitely add another clove of garlic next time as well.

Three Cheese Manicotti II

My daughter and I loved this recipe though I did cut back a little on the Mozzarella that was mixed in with the ricotta.

Manicotti Alla Romana

Reviewed: Oct. 15, 2012
I did make a few tweaks to the recipe such using half ground beef/half Italian sausage and added a little parmesan cheese to the meat mixture, other than that I followed the recipe to a tee. My family seemed to really enjoy it, especially my husband.
