Layered Spinach Mostaccioli

This is yummy and very easy. Next time, I think I'll throw a little crushed red pepper in the sauce, just to give it a little kick. Maybe play around with different cheeses as suggested, or maybe even add mushrooms. I like a recipe with many possibilities. Thanks for this one! One question for one of the reviewers below. Why on earth, if you don't like cooked spinach, would you choose a recipe with cooked spinach as the *main ingredient*, then give it one star for having cooked spinach?? Think about it.

Lemon Zucchini Bread

We loved this recipe. I made a few changes, because I wanted to make it super guilt free. Used whole wheat flour in place of white, instead of the oil and white sugar, I used 1/4 cup honey (gave it a wonderful, homey smell and taste), 1/4 brown sugar (a little less...I don't like it too sweet) and added chopped pecans. I have also tried adding 1 1/2 cups shredded carrot, which also turned out great. Fool-proof, delicious and easy to make substitutions. I love it! Thank you for sharing!

Berry Lemon Mousse Parfait

This is absolutely delicious! I don't like desserts that are TOO sweet, so this is right up my alley. Instead of heavy cream and sugar, I just used Cool Whip mixed with the zest of one lemon, plus a little fresh lemon juice, then put in the freezer for about 2-3 hours. I have even tried sprinkling the top with chopped pecans. Light and yummy, and my guests always love it!

Philly Cheesecake

This was my first cheesecake, and I couldn't have found a better recipe. I made it for my father, and he couldn't get enough. The texture was exactly what I was looking for, not TOO creamy but not spongy either. Just perfect. Thanks, Maureen!

Italian Sausage Soup

This is now officially one of my favorite soups. I can't wait to make it on a cold winter night. I'm a garlic lover, so I used 4 cloves, plus I added one large chopped Spanish onion, a handful of chopped fresh parsley thrown in with the spinach, fresh tomatoes instead of canned (nothing like fresh tomatoes in a soup!), and a few shakes of Italian seasoning. If you love a chunky, stick-to-your-ribs soup with tons of flavor and texture, this is for you! DO NOT forget to pick up a fresh loaf of your favorite bread, because this soup practically begs for a good, old-fashioned Italian sopping up of the juices! Fantastic! Thank you!

Marinated Tuna Steak

Hugh's Dry Rub

This is very flavorful. I cut down on the salt, and it was still good. I brushed a little olive oil on the steaks, then sprinkled with some lime juice, then added the spice rub and some chopped parsley. Marinated then put under the broiler. Delish!

Summer Nights Eggplants

Delicious. I love eggplant, and I'm always looking for new recipes. I cut down on the oil, cheese and breadcrumbs to make it a little more waistline-friendly, but it's a fantastic, simple recipe. Definitely use the feta, it's perfect for this. All that was missing was the balcony in Greece, but one can always wish... :) Thanks for sharing!

Whipped Cream

I'm with everyone else who said they will never use Cool Whip again. Why would you, when it's so easy to make your own? This produces a whipped cream that tastes so fresh and really makes your recipes that much better than with the pre-fab stuff. I like a dollop of this over fresh fruit, and you have an instant, simple dessert. A few tablespoons of softened Mascarpone cheese folded in at the end sends it over the top! Try it!

Portobello Stacks

I really like this recipe. The only thing missing, for my taste, is some fresh herbs. A few whole basil leaves between the onion and tomato make a big difference. I have also tried this casserole style - I made a simple sauce with the tomatoes and onions, with some garlic and lots of fresh herbs-oregano, basil and rosemary. Omitted the balsamic vinegar and instead poured the sauce over the eggplant and mushroom and topped with the cheese. This made a delicious and healthy vegetarian main course. Thanks for sharing, Deb!
