Colleen's Slow Cooker Jambalaya

My husband LOVED this dish and I really didn't think he would care for it! I didn't use chicken broth(didn't need it in the slow cooker) I only had smoked sausage and no shrimp but it was still gooooood! So glad I made it. BTW, my parents live in Hixson and I was raised on Siganal Mt. I'm sharing this recipe with my Mom!!

Mediterranean Chicken with Eggplant

Made this last night for dinner. My husband declared it "EXCELLENT". I did cut the chicken into large pieces then marinated in lemon juice,zest,balsamic vinegar and olive oil and grilled it half cooked before baking.Also took advice of others and layered ricotta under chicken. Delish! Thanks.

Oreo® Cookie Cake

Made this for dessert for my parents (very small,casual)anniversary party. Used devil's food pudding mix w/3cups of milk as suggested by another reviewer and I used the two full packages of cream cheese and didn't find it too tangy at all. Brought the leftovers (makes aLOT) to work next day and everyone loved it! Will try making w/FF ingredients next time.

Slow Cooker Sweet and Sour Pork Chops

Did this in the pressure cooker for about 20 mins. Left out tomato paste. Husband LOVED it. I didn't think he would. Talked about a great dinner the next day.

Tuna Broccoli Roll Up Casserole

I made this the other night when I forgot to plan for dinner. It interested me b/c I had all the ingredients on hand. Husband liked it very much and I didn't think he would. Very easy and quick. I used a can petite diced tomatoes, drained well for the tomato. Would be a good dish to get your kids to eat their broccoli. Will make again! Thanks Pidge.

Taco Pie

My husband and I really liked this. You could substitute Italian ingredients like pasta sauce in the meat mix and use ricotta cheese instead of sour cream for an Italian theme. Great possibilities. I also used an 11x7 pan as another reviewer suggested but I would spray lightly w/spray oil as mine seemed to stick a little. Used shredded cheddar and slice ripe olives on top. Also spread a can of fat-free refried beans over crust before adding meat mixture. YUM!

Honey Grilled Shrimp

I agree with reviewer Neddam. A very good pasta sauce is essential. Also added riccotta chesse to filling and used boneless skinless chicken thighs. Great and easy recipe!

Curried Chicken and Brown Rice Casserole

Made this for dinner last night and my husband and I liked it. I used to make a dish very similar years ago which called for the rice cooked separately and chopped green apple was added to the chicken mixture which I did to this recipe. Husband said he would like this better without apple. Easy and will make again.

Taco Soup V

Made this in the crockpot which was very easy b/c all I did was brown the ground beef and onions first then put everything else in a crockpot. Alot like chili, but a little different. Will make again.

Sauerkraut Soup II

I've had this recipe in my files for years. I have never used potatoes in this soup but I might try it. Comes together great in a crock pot just dump everything in and cook on low about 6-8 hours. Thanks Terrilyn

Garbanzo Bean Salad

Very easy and different. Used green onions instead of regular onion and didn't have walnuts so I subbed dried cherries. I love garbanzo beans and look for ways to use them. Served with fried chicken and deviled eggs.

This is one of the best shrimp recipes I have ever had and I'm from Savannah,Ga. originally(we eat alot of shrimp). Be sure to use fresh parsely. This one is made regularly at our house.

Sicilian Meat Roll

I made this last night for supper. My husband who thinks I'm a pretty good cook, said this was excellent. I changed a few ingredients b/c that what I had on hand. I used ground turkey and cheddar cheese in the filling.Also, I poured half a jar of good quality tomato and basil commercial spaghetti sauce over the top before baking.This is a keeper! Thanks.

Beth's Scalloped Cabbage

This was great! I had half a head of cabbage left over from making slaw and this recipe was so easy and delicious. The only thing I "tweaked" was the addition of a pinch of nutmeg and cayenne. Thanks!
