Honey Grilled Shrimp

Reviewed: Jul. 30, 2005
Made this last night for supper. When I told my husband what we were having,he got worried b/c he doesn't like recipes that overwhelm the flavor of the shrimp. Well, he didn't even miss the cocktail sauce! This is nice and light, something different. Thanks Kendra

Jenny's Cuban-Style Slow-Cooker Chicken Fricassee

Reviewed: Jul. 16, 2005
This was easy and pretty good for a quick throw together crock pot dish. My husband even liked it and he likes "plain" food. Next time will leave out potatoes b/c even though I cubed them and put them in the bottom of the pot they did'nt cook thoroughly. Will serve with rice and black beans in future.

Beth's Scalloped Cabbage

Reviewed: Jul. 16, 2005
This was great! I had half a head of cabbage left over from making slaw and this recipe was so easy and delicious. The only thing I "tweaked" was the addition of a pinch of nutmeg and cayenne. Thanks!

Applesauce Custard Pie

Reviewed: Jun. 24, 2005
Made this yesterday and I did have to let it cook longer than stated probably b/c I live at a high elevation. I also covered the crust edges with foil strips before I baked the pie. Good taste and sweet enough for my husband. I also used unsweetened applesauce and the amount of sugar called for. Thanks for an easy and different pie recipe.

Chipotle Shrimp

Reviewed: May 30, 2005
Made this for supper the other night. I liked the spice but my husband thought it overpowered the taste of the shrimp. Maybe next time, I'll cut down on amount of chipotle pepper. Thanks for a different and easy shrimp recipe.

I've had this recipe in my files for years. I have never used potatoes in this soup but I might try it. Comes together great in a crock pot just dump everything in and cook on low about 6-8 hours. Thanks Terrilyn

Springtime Ham and Spinach Salad

Reviewed: Apr. 13, 2005
Very good! Especially liked the dressing. Made this for lunch with my visiting parents(my guinea pigs). My mom had two helpings(she eats like a bird)! Would be great made with chicken too. Also, I subbed plums instead of peaches b/c my dad doesn't care for them.

Microwave Lemon Curd

Reviewed: Mar. 13, 2005
This was really simple to make. I had to be patient and stay by the microwave to keep an eye on it. Used 70% power on my microwave oven. Will never buy commercial lemon curd again.

Reviewed: Feb. 10, 2005
This was ok but I think it would be better made with orzo pasta instead of couscous.

Sauce for Duck

Reviewed: Dec. 31, 2004
Made this for our annual before Christmas dinner I make for my parents. Fantastic! Instead of white wine I used golden rum, hey, orange and rum. Worked great! To make things simpler, I made it the day before. Used Roast Duck recipe from this site and thinned it a bit with chicken stock before baking. Never made duck before.Everyone loved it.

Beef and Noodle Bake

Reviewed: Aug. 19, 2004
I have made versions of this all my life. It's a great base recipe, but if I were to make it for children, I would sneak in some vegetables in the mix and use whole wheat noodles.

Chicken-Avocado Tortilla Soup

Reviewed: May 9, 2004
I made this in my crock pot and cooked on low about 6-8 hours. Instead of slicing the avocado, I made guacamole with fresh Italian flat leaf parseley since my husband doesn't like cilantro, and put a dollop in the soup before serving. Great recipe! Will make this again.
