I made this to have a nice snack on our roadtrip to FLA. Very moist and tasty. Made it exactly as directed. Would have liked a stronger pumpkin flavor though. I know that the flavors enhance after a few days but this needed a little more pumpkin for us.

Gourmet Mushroom Risotto

Followed this exactly as written. Next time I'll cut down on the mushrooms though, probably'd use only one pound. Delicious and Risotto came out perfect.

Ethiopian Cabbage Dish

This is a delicious side dish. I used all veggies from my CSA and it was wonderful. Took everyones suggestions and 1) cut oil to 1/4c and 2) doubled spices. Perfect. Panfried leftovers and added some sauteed ground beef; voila- another great meal.

Sour Cream Apple Pie I

this was great exactly as written. I didn't peel apples and no one could tell. (less work for me) I mixed diced apples with sugar, nutmeg before mixing with sour cream. next time I'm going to add 1/2tsp. cinnamon only because I like. but a really great, easy recipe. thanks JJohn
