Made for dinner yesterday, and was impressed. Added about 1/2 cup of Sherry to thin out the sauce a little and served over pasta.

Great idea for a side dish, but I messed up and used Mexican 4 cheese blend and bacon bits to save time, and the DW did not like it at all. If I make it again I WILL adhere to the recipe as written. PROMISE.

Made this recipe as a pre Easter dinner for the family. It came out fork tender and quite moist. The marinade went over really well on the veggies. Everyone said it is a keeper. (wife, mother-in-law, my two sons, and one grandson)

Mexican Shrimp Cocktail

Had this for dinner last night, and as other reviewers stated, the cucumbers ARE A MUST. It was fantastic. Only draw back is that the wife does not like cilantro and I think it is a flavor must. Guess I will have to make it two different batches from now on.

Slow Cooker Sauerkraut and Sausage

Reviewed: Aug. 8, 2011
Made this for dinner yesterday, and was quite impressed with the taste. Downsized to two servings, but used a 14.3 ounce can of kraut and as suggested by another reviewer, a 1 pound Kielbasa sausage, thinly sliced. Used two tablespoons packed brown sugar and a medium sized yellow onion finely diced. Came out beautifully, and the wife sayes its a keeper. Will most definetly be makeing again.

Asian Salmon

Reviewed: Jul. 18, 2011
Made this yesterday. Can only give 4 stars due to changes. Cut down to two filets due to only two of us. Took other reviewers suggestion of one TBSP. EVOO and two TBSPS. Sesame oil. Also used brown rice but added two tsps. dried dill. Rest of recipe amounts used as listed. Came out great, but will have to cut down on the rice next time.

Bob's Darn Good Chili

Reviewed: May 1, 2011
Made this yesterday, with some modification, and was informed that it is a keeper. First mod. was I added 1/2 lb. of 'hot'Italian sausage (bulk, not link) to the ground beef. Next cut the chili powder down to 1 tsp. and added 1 tsp. of Cumin, in place of the pasta sauce I used an 8-oz. can of tomato sauce. And instead of Kidney beans (we don't like them) i used 2 cans of Bush's Pinto Beans. I browned the beef and sausage together, then sauteed the onion and garlic together, put all the ingredients into the slow cooker and cooked on high for 4 hours. Will definately be makeing this again.
