Personal trainer and health food nut. Can change just about any recipe to a healthy one.
My favorite things to cook
Big breakfasts and lasagne
My favorite family cooking traditions
Home made, fresh tomato sauce, which we Italians call gravy, and the best lasagne this side of the Atlantic or Pacific.
My cooking triumphs
Have never ruined a Thanksgiving dinner. Turkey is always perfect and juicy.
My cooking tragedies
Too many to list. All good learning experiences though.

Italian Style Turkey Meatloaf
This is submitter of this recipe. Thank you for all the good reviews. A few things I would like to mention. I use my own tomato sauce (marinara) in this recipe which has sautéed onions and garlic in it. You can add what ever you want to your liking. Meatloaf can be made out of any meat. I personally don't like Worcestershire sauce, so I don't use it, but feel free to add it. This is "Italian" turkey meatloaf which is why I don't use ketchup. (I am not a fan of ketchup either unless I am eating French fries) If ketchup is all you have or you want to top it with brown sugar (which was unheard of in my Italian family) feel free.

Black Bean Vegetable Soup
This was good, but I should have followed others advice and reduced the liquid. It was way too watery. I added celery and bell pepper. It was even better the next day after the flavors had time to sink in. Next time I will add less liquid and make it the day before I serve it.

Quinoa Side Dish
Too much thyme for my taste. It overpowered everything else. I'll cut the amount of thyme in half if I make this again.
