I never post reviews, but I had to with this one for all the non-bakers out there looking for a good and fairly easy sugar cookie. After skimming through the reviews I followed these simple pieces of advice...
Definitely add the extra 1c sugar and 1tsp vanilla for a sweeter taste.
Rolling out with confectioners sugar, fantastic idea. When you need to use a bit to get rid of stickiness, cookie stays sweet and not floury.
When mixing, I mixed the sugar and butter by hand, literally. I think this made a huge difference. All other times I used mixer and just couldn't get the right consistency. Probably over mixed.
I refrigerated for a little over an hour and was able to keep all dough out while preparing in batches.. rolled out just fine.
One BIG difference I noticed just from trial and error... definitely keep the rolled dough closer to 1/2 inch thick. So much easier to handle.
My 2 year old little "helper" loved these cookies, and she is picky picky! :)
