Penne with Chicken and Asparagus

My family loves this recipe! I have made it with penne and angel hair pasta, both have turned out well. The only thing I do different is use a good white wine instead of chicken broth, add some crushed red pepper for spice, and double the cheese using freshly grated. Be generous with the garlic and you will not have a bland dish! Thank you Laurel for a delish dish that is easy and quick to fix for the work week!

Cauliflower-Cheese Soup

This was a good starter recipe, however I made some changes. I cooked the chopped up vegetables in 2 tablespoons of olive oil for 5 minutes before I added the liquid. I added a bit of garlic and used vegetable broth instead of water. I also added some chopped fresh parsley, finished it off with a 4 year old cheddar. Very good!

Cucumber Sandwich

Great sandwich! I didn't have sprouts or avocado, so I added some sweet onion and some fresh red bell pepper, otherwise made the recipe as written, on crunchy oat bread. Perfect!

This was awesome! I couldn't stop picking at the leftovers. Perfect easy weekend morning dish. I topped it with some blueberries and strawberries and finished it off with some real maple syrup. Delish!

Vegetarian Tortilla Soup

This recipe is great! I did make changes...I used all vegies called for fresh and not frozen or canned, threw in about a cup of fresh salsa, omitted corn and added a can of black beans. I also reduced cumin to two tablespoons. Instead of waiting until the end to garnish soup with tortilla chips, I added them at the begining of cooking as the chips will break down and thicken the soup. After ladeling my vegetarian portions out, I added some cooked cubed chicken for meat eating family.

Black Bean and Salsa Soup

This soup in wonderful! I add fresh cilantro and garlic and puree about half the ingredients so it still has a chunky texture. So good for you too!

Joey's Peanut Butter Cookies

Beef Tenderloin With Roasted Shallots

This recipe was really wonderful. Even my son who usually won't eat beef enjoyed it. Instead of a whole tenderloin I cut one up into pieces or 'medallions' to take out the extra fat. Turned out very tasty.

Banana Crumb Muffins

This is hands down the best muffin recipe I have ever made. I took some of the other cook's advice and used half the called for butter and made up the rest with oil. I also added a cup of chocolate chips. Very yummy, I had 2 for breakfast!

Easy Lemon Chicken

This recipe is one of the very few that my whole family enjoys. My daughter loves to wrap the chicken and rice up in tortilla shells. It is also great as leftovers the next day, if your lucky enough to have any left!

Delicious Bread

This recipe was wonderful! I don't have a bundt pan, so I used my pampered chef stone deep dish baker and it worked very well. The bread cooks in it's own butter so need to add extra when it's done. My husband thought it tasted like a local popular restaurant's famous rolls. I will be fixing this often!

Creme Brulee French Toast

This recipe was great. Even my ultra picky eater husband loved it. One drawback: the creme part is a bit too eggy. Next time I fix this I will try reducing the eggs to 2-3 instead of the 5. I also only chilled it for about an hour before baking. Still turned out great.
