Crustless Spinach Quiche

Brianna, Ryan, Matthew, and I ate it. Caitlyn didn't. However, she ate a lot of food after school, so that could've contributed to the fact that she didn't eat. She never did say whether or not she liked it. Served it with Breakfast Sausage. Might add another egg or two, though. Bake it in the deep dish pie pan.

Gourmet Mushroom Risotto

I liked this (but I LOVE mushrooms) and the rest of the family just thought it was OK. I don't think I cooked the rice enough as it wasn't too creamy. It was tender but not creamy (like I have tasted risotto to be). I think it's my fault, though, as I had never tried risotto before this and I know that there are tricks and tips to making good risotto. My husband said the leftovers got really mushy and he doesn't mind having this again, just not as a leftover.

Split Pea Soup

Chicken Fajita Melts

A few of the family members really liked this and a few just thought it was OK. I'm going to try it again with a different bread since the one I tried was too crusty. By the time I baked it in the oven, the bread's crust got too hard. Maybe that will make all the difference.

Penne with Spicy Vodka Tomato Cream Sauce

I think it's just four stars as written, but FIVE stars by doubling the cream. Also, when I ran out of vodka, I used dry vermouth and it also tasted fine.

Baked Honey Mustard Chicken

I used what mustard we had on hand, which happened to be Honey Mustard. As a result, the chicken was a little sweet, but my kiddos liked it (esp Brianna). We'll see if the leftovers reheat well. Will definitely try again, but with Dijon Mustard next time. Also used less paprika, as suggested by others.

Baked French Toast

I made this using the 6 eggs & 2 cups half and half, suggested by another reviewer. It was great and not soggy. The entire family loved it. However, I first tried to use a 9by13 pyrex dish, but all the slices didn't fit. I transferred my slices to a larger casserole dish that I have and all the slices fit. I'm glad I ended up using the larger dish because the bread puffs up while baking and some of the sauce spilled over the side. I can only imagine what happens with a smaller pyrex size. The other change we'll make for next time is to make half the sauce. The dish was too sweet for my family. I felt like I served dessert instead of breakfast. Will use half of the sauce next time and top with pecans to try it a little differently.

Homemade Chicken Fettuccine

I liked this recipe, in general. Gave jt three stars because it's easy to make. It's not super great but 2 of the three kids ate it, which is good and means I'll make it again. Would double the sauce next time and add more butter because it got absorbed rather quickly while sautéing. Also would leave out the mushrooms since the baby portabellos that I used turned the sauce an unappetizing color.

Chicken and Broccoli Braid

I'm giving it a rating of 2 because Ryan and I didn't think it was "that bad," but it also wasn't raving good. None of the kids ate it. I don't plan on making it again, unless I figure out a way to make my own dough. Maybe it's just us because we don't eat processed foods much, but that crescent roll stuff is AWFUL!!! The filling was OK but probably needed more seasonings of some sort. Also, I think adding a creaminess to it (roux with cream maybe?) would make it a better filling.

Creamy Chicken and Wild Rice Soup

This soup is always a winner with our family. I double it so that my hubby has leftovers for lunch. This is one of his favorite leftover lunches, too. Although I double the soup, I don't always double the roux. It just depends on how thick I want the soup. Also, I put in some extra wild rice since we like more rice in our soup and there's never enough in the boxes.

Skillet Ham, Cabbage and Potatoes

The entire family likes the flavor of this dish. After making it a number of times, I have cut the amount of cabbage down to half a head. The kids don't like the stringy soft cabbage as much as the hubby and I. They're more likely to eat this if there's less cabbage.

Chicken Pot Pie IX

Double the recipe and keep extras around for a second meal. We eat this twice a month and top it with the dumpling recipe on this site instead of using the frozen pie crusts (although that tastes good too).

Curried Coconut Chicken

My family liked this recipe. My kids are not into tomato chunks, so I pureed the stewed tomatoes in a blender before adding. I also chopped four red potatoes and two cups of chopped carrots to add with the coconut milk. I did this because my kids eat these when found in soups.

Award Winning Soft Chocolate Chip Cookies

This is our family's favorite chocolate chip recipe. We have to make 1/2 the recipe because we have no self control and will eat the entire batch in one or two days. I usually cut the amount of choclate chips in half and still feel there's a lot in the cookies. So quick & easy to make, too!
