About this Cook
I am a high school teacher with two very active little boys.
My favorite things to cook
Bread! Baking bread is almost a magical process for me. Pair it with some homemade butter, and I'm in heaven.
My cooking triumphs
Discovering the perfect bread recipe. It's from a 1960's cookbook put out by Fleischman's yeast. Their sponge method bread is THE BOMB! Funny, though, I can't find it in their modern day site, only in that cookbook. It truly is the best recipe.
My cooking tragedies
Gee, where do I start? I have two boys who are vegetable-phobic and general picky eaters. I'm slowly building up a recipe library of food that my family will ALL eat! Trial and error, of course. I think the worst recipe was a chicken spaghetti recipe that made A TON of food . . . and no one in my family really liked it. I felt too guilty to throw out the leftovers, so I spent the next week eating it for meals. I actually didn't think it was that bad; it just didn't suit my family's taste.

Touchdown Taco Dip
This is really easy and super good! I accidentally used a 28 oz. container of sour cream, so I ended up adding another quarter packet of taco seasoning as well. I also put in some Rotel diced tomatoes and chiles.

Microwave Popcorn
I was always too scared to try this based on the reviews from people who said that their microwaves blew up or the bags started on fire. (However, I think the reviewer who suggested that it's because of people using recycled bags has some merit.) Anyway, I finally tried this without oil -- just 1/4 C. of popcorn in the bag, folded it over, and stood it in the microwave. It took 1.5 minutes to be done before it started to burn, and there were quite a few kernels left in the bottom. However, I am so impressed at how crisp this popcorn was without oil -- it reminded me of theater popcorn! I did add some butter after it was done popping. It was great stuff. No longer am I buying any of the unhealthy prepackaged stuff.

Shiny Cookie Icing
This is a great recipe. Easy, fast, and simple to remember. Yes, the recipe definitely needs more milk. I added 2 tablespoons (6 teaspoons) initially and then added another splash later as well. Maybe 2 1/2 tablespoons or possibly 3 is the magic number for this. If you don't get everything iced by the time the frosting begins to harden up, just pop it in the microwave for a few seconds to soften so you can spread it.
