Department Store Onion Soup

I made this for 40 vegan servings. That translated to 17lbs of yellow onions to caramelize. It took quite a while, but I'm happy I took the time to get them nice and brown as it really made the taste. With that big of an adjustment to the sizing, I reduced the paprika from over 1/3 cup to a few tablespoons and think that was wise in the end. With the onions caramelized so well, I didn't require a browning sauce. It tasted so good that I was honestly scared to toss some balsamic vinegar in there or something and to wind up ruining 10 quarts of good soup. I used a good quality veggie bouillon to make the broth. It got tons of compliments from children and adults, most of whom were not vegans or vegetarians, and several of them said they liked the soup but didn't even like onions! Thanks!!

Vegan Bean Taco Filling

Came out great. Thicker than expected, but not problematic. I put it on top of fried bread and topped it with cut spinach, lettuce, and cilantro and drizzled it with taco sauce. Very filling and tasted great!

Waldorf Salad I

I wasn't paying attention and accidentally bought some watercress at the grocery store. I did an ingredient search and came up with this recipe, which I had everything on hand for. I've heard of waldorf salad but never tried it, so I was a little sceptical about combining spices and chives with yogurt, mayo, fruit, and this new green leafy thing. Boy am I glad I did! We followed the recipe exactly and it came out GREAT! I'll be buying watercress on purpose from now on just to make this recipe.

Honey Limeade

Good recipe! Made three times. Once according to directions. Once with 1 tbsp grenadine extra. Once with 1 of the tbsp of lime juice substituted with Rose's sweetened lime juice and 1 tbsp grenadine. The middle recipe--per directions w/ added grenadine--was by far the best. Was worried about the honey but it came out great. Thanks!

White Russian Brownies

I hated it and my husband liked it so I refrained from rating it. After using half the bowls in my kitchen, I found the recipe to have too little chocolate mixture and too much cream cheese mixture. It overcooked the outsides while the the inside remained gooey. And the taste wasn't worth raving about in the least. I was terribly dissapointed. My husband said it was like eating cheesecake inside a cookie sandwich, so he liked it.

Hot Artichoke Dip

Made this for Thanksgiving. The women of the family were begging for the recipe! We found monterey jack with jalepenos in it, so we used that. Even the spice-haters in the family loved it. We also used all the parmesan inside and topped off with more. Still wasn't too cheesy. 5 stars, definitely!

One pound of apples equals 2 large, 3 medium, or 4 small apples. You need 4.5 large apples, or 6.75 medium, or 9 small apples for this recipe.

Johnny Appleseed Meatballs

I'm not a cook, nor am I a meatball person, but I loved this recipe. I wasn't going to finely dice up an apple, so I took a soft apple and grated it. Worked perfectly! I suggest mixing up the gravy and sugar before pouring it in. It makes stirring it easier. And it only fed 3 of us. Overall, didn't taste apple...just yumminess! Far better than those jelly meatball recipes. Served over egg noodles and substituted garlic salt. Thanks!
