Spinach and Sun-Dried Tomato Pasta

Delicious! Have been looking for pasta recipes without red or heavy white sauce and this was it. I did skip broth as I only has oil soaked tomatoes, and I had sliced mushrooms to use up which provided liquid. Also added some salt free spice mix and as always used whole wheat pasta. An easy and versitile recipe. Thanks!

Crumb-Coated Chicken Thighs

Delicious flavor, and fast and easy! My husband raved about the taste. I used half Italion and half Panko breakcrumbs, and no salt. I used my new discovery, smoked paprika, which has a wonderful smell, and I also used Chipolte Pepper Flakes in place of the chili powder. I served this with Curried Rice Pilaf (with a can of peas added) from the site and it was a hit. I think this is a company meal and it will become a regular for us! Thanks.

Curried Rice Pilaf

This was an easy, versitile, and delicious rice dish. I was making Crumb Coated Chicken Thighs, from this site, and this was the perfect side dish. I did make some modifications - extra onions and curry, olive oil instead of butter, used a brown/wild rice mix, and added a can of peas at the end. I didn't bother heating the broth and felt the salt was unnecessary as broth has so much. I was out of raisins and can't wait to make it with them. This will become a regular rice dish for us. Thanks

Kidney Bean Salad

Delicious, nutrious, and easy. I use green onions, low fat mayo, and usually add extra celery. This is now a regular side dish.

Trout Saratoga Baked

I'm always looking for easy low calorie ways to make fish. This is a winner. I used filets and didn't bother to baste. Served it with cous cous as someone else suggested and it was excellent!

Pea Salad with Balsamic Dressing

An excellent pea salad! The feta and basmalic vinegar give it a unique flavor. I do cut down of the mayo a bit, and to please my husband I microwave the green onions for 30 seconds which cuts the sharp flavor just enough. Slivered almonds work well, too.

Ginger Steak

Fast, easy, and delicious! I will be using this one often. I used fresh ginger for more flavor. I also made it in a quart baggie, squished the ingredients around, and then added steaks to soak for an hour. Would also be great for pork and chicken.

Kale Puttanesca

This was fantastic and so easy to make! Kale is so nutritious that I've been looking for more recipes using it. I was worried the anchovy would overpower the dish, but its flavor just blended in and added to the delicious flavor. This is definitely a winner and a keeper.

This was fantastic and so easy to make! Kale is so nutritious that I've been looking for more recipes using it. I was worried the anchovy would overpower the dish, but its flavor just blended in and added to the delicious flavor. This is definitely a winner and a keeper.

Black Bean Salad

So easy and delicious! I didn’t have fresh tomatoes so used one can Rotel and one can no salt diced tomatoes, both drained. I served it with avocado slices and a spoonful of sour cream on top! We are limiting meat so this was a great main dish along with a green salad, and the second night I served it on top of the greens. Thanks for sharing!

Hudson's Baked Tilapia with Dill Sauce

Fast, easy, and delicious! The fresh lemon slices on top are great. I like baked fish recipies to cut down on the fat and frying mess. I did cut mayo and sour cream amounts in half and used low fat. Will be making this regularly and will try with other types of fish, too.

Creole Shrimp

Awesome! Had never taken time to make a real roux before and I think that made all the difference in giving it a rich flavor. Made modifications due to what I had and other reviews: used one can stewed and one can diced tomatoes, roasted red pepper in water in place of green, 2 heaping tsp. of jar minced garlic, a few shakes of Tabasco, a few shakes of red pepper flakes, and only 1/2 cup of water. Forgot the parsley. Served it over a brown/wild rice mix and it was fantastic! I discovered that while shrimp is frozen the tail shells pull right off. Will be a regular meal for us. Thanks!

Chicken and Turkey Marinade

Delicious! My first recipe using fresh herbs from my oak barrel herb garden - what a difference from dried. Only had 4 hours to marinade turkey thighs and can't wait to do a 24 hour soak. After cooking I used half the drippings for stove top cornbread stuffing (with sauted onions and celery) and the rest for gravy. My husband and I both loved it and this will become a regular dish for us. Also, I was pleased to find a recipe that wasn't loaded with salt. Thanks!

Grilled Montana Trout

This recipe was simple and delicious. Our neighbors gave us some fresh caught trout which I had no idea how to cook. Allrecipies to the rescue! Wrapping each fish in its own packet worked out well as they varied greatly in size, and thus cooking time. There was more than we could eat in one meal so I used the leftovers the next day to make trout salad sandwiches, just adding a bit of mayo. Yummy!

Spinach Stuffed Chicken Breasts

Wow! My husband and I absolutely loved this. I'd always thought stuffing chicken breasts would be tough but it was so easy! I used fresh spinach, microwaved briefly and then chopped coursly. I will cut down on the mayo a bit next time. My husband didn't want garlic in his and boy did he miss out. Wrapping it in a bacon is a must! When serving I spooned a bit of the sauce in the pan on top of each one. This is a keeper and a company meal! Thanks.

Pan Seared Red Snapper

This was easy and has an excellent flavor. I'm looking for more fast fish recipes and this is a keeper. I mixed the marinade ingredients in a freezer baggie, squished it around and then added the fish and let it sit for about an hour. I cooked it as per the recipe. What a delicious sauce! I think I'll try it with fresh ginger next time.
