River Omelets

This is a great recipe. For two people I used one cup of egg whites and loaded it with vegetables including spinach, mushrooms, bell pepper, green onions, and Turkey bacon. I also added the cheese 15 minutes at the end of the cooking time which was perfect. This saved me the fiddling of frying two omelets and can be a nice dinner with a salad!

Irresistible Irish Soda Bread

Chef John's Flour Tortillas

Fantastic. Watching the video with Chef John really helps. I rolled out the tortillas and it wasn't too hard .... I got better with practice. Will definitely make again.

Honey-Ginger Grilled Salmon

I used a good tablespoon of fresh ginger and and a fresh garlic clove and it turned very well. I served this with lemon risotto which was an excellent complement to the dish.

Mexican Rice III

The only deviation from the recipe was I omitted the green pepper. It was excellent. I paired this with Enchiladas Suizas also found on this site and well worth trying.

Enchiladas Suizas

This is the best enchilada recipe I have tried. I cut down on the prep time by following the advice of other reviewers and slow cooking the chicken in bottled salsa verde, and then added some of the ingredients in the recipe such as onions, cumin, jalepeno pepper, etc. . I used 3 chicken breasts which was enough for 10-12 enchiladas. I also spooned dollops of sour cream on top vs. the heavy cream and it was great. I paired this with Mexican Rice III from this site which was also excellent. Next time I will make this for company.

Asian Lettuce Wraps

I substituted ground turkey for the beef and fresh chopped ginger for the pickled ginger and it was excellent. Also, I used the 'living' Boston lettuce for the first time and WOW......absolutely fresh and crisp leaves for the perfect lettuce wrap.

Kung Pao Chicken

Grilled Potato Casserole

This recipe is a keeper. I followed the review suggesting to add garlic to the butter and flour mixture. Also added about 2/3 cup of grated asiago cheese to the sauce. Finally, I cooked in the oven and lined the casserole dish with foil for easy cleanup.

Caesar Salad Supreme

I have not stopped making this recipe since I first tried it a few months ago. As per the advice by other reviewers, if you follow the exact recipe, it is a success. However, the last time I made it I was out of anchovies paste. I added a few extra drops of worcestershire and learned it is not the end of the world to omit this ingredient! Still good.

Unbelievable Fish Batter

I made this with fresh halibut and it was fantastic - it was up there with some of the best restaurant battered fish I've had. I followed the tips to reduce baking powder and added a little salt and pepper in the batter. Can't wait to make this one again.

Crab Rangoon I

These were so good that I decided to share them with a few of my neighbours and they were all raving! The only change I made was fresh parsley instead of dried. The blend of ginger, cilantro and soy sauce are the keys to this very tasty recipe.
