Unbelievable Fish Batter

I made this with fresh halibut and it was fantastic - it was up there with some of the best restaurant battered fish I've had. I followed the tips to reduce baking powder and added a little salt and pepper in the batter. Can't wait to make this one again.

Mushroom Crusted Ham and Cheese Pie

This is a wonderful and unique variation of Quiche. Followed the reviews to add more mushrooms and garlic to the crust. Will definitely make this recipe again.

Crab Rangoon I

These were so good that I decided to share them with a few of my neighbours and they were all raving! The only change I made was fresh parsley instead of dried. The blend of ginger, cilantro and soy sauce are the keys to this very tasty recipe.

Artichoke Tossed Salad

The dressing for this salad is fabulous. I do not have a blender so I just minced the onion with a grater (about 2 heaping tbsp.) and it was great. I cut followed recommendation of extra artichokes which was the right proportion. Will make this one again soon!

Flan de Coco (Coconut Flan)

This was so easy to make that I was suspicious. However, I served this to a dinner party of 8 people and it was fantastic. It tasted fabulous and the texture/consistency was perfect. I served with a dollop of whip cream and some fresh quartered oranges and dark chocolate on the side. Even the guests who do not normally like dessert were raving!

Grilled Tequila-Lime Shrimp

This is an easy and excellent appie. I did not grill the shrimp, rather fried them for a few minutes in olive oil and served with toothpicks. Everyone loved them.

Uncle Howie's Favorite Artichoke Dip

I served it cold because I was looking for a recipe to avoid turning on the oven during the summer. In place of the temperature heat, I added a couple of teaspoons of hot sauce to the recipe to give it a zing and it did the trick.

Greek Pasta Salad I

This recipe is the first pasta salad that I served which was a hit with guests. A few changes: I used 2 tsp. sugar, substituted grape tomatoes for cherry tomatoes, red onion for the green onion, and kalamata olives for the black olives, and omitted the mushrooms and pepperoni. My guests took a doggy bag home and ate it for lunch the next day!

Asian Broccoli Patties

I have to admit that this recipe was excellent and am surprised at 3/4 of the reviews. I appreciated the review to cut down egg and add flour, which worked. I simply added some asian flavour: (soya sauce, sesame seeds, oyster sauce, fresh ginger & garlic). This is great foundation recipe that is simple and can be customized. I will definitely make this one again!

Thai Cashew Chicken

I cut fish sauce in half, added sliced mushrooms and strips of red & green bell peppers. Then I skipped the peanut butter and added cornstarch to the marinade. This made the recipe very close to the Thai restaurant version. I will make this one again.

This was fantastic even though I omitted the eggs. I also added a Tbsp. of brown sugar to vinegarette and substituted cilantro in place of parsley to give it a different kick.

Simple Artichoke Dip
