Zucchini Brownies

The Best Rolled Sugar Cookies

Great Recipe. The Cookies stay the shape of the cutter used. I topped my cookies with homemade icing my son loved using the icing to paint all the cookies.

Polynesian Meatballs

Easy Granola Bars

They had great flavor but fell apart. I will have to adjust cooking time to see if that will help. I also used homemade coconut sweetened condensed milk so that could have made a different texture. I will make these again, hopefully I can get them to come out as bars. Either way they will get eaten my husband loved them.

Dairy-Free Coconut Candy Bar Ice Cream

If you use the cream of coconut there is not need to add any extra sugar because it is already sweet enough. In fact I used two cans of the coconut milk to the one can of cream of coconut and I feel it was too sweet. I will make this again but will try using three cans of coconut milk to the one can of coconut cream. I made this recipe without an ice cream maker. I mixed the ingredients in a large bowl, let it sit over night in the frig then stirred it and placed in the freezer with some plastic wrap covering the bowl. I then pulled it out of the freezer every 30 to 60 minutes to stir for the next 5 hours. I melted the chocolate and drizzled a little at a time putting the ice cream back into the freezer (for 10 minutes) after each addition. This allowed the chocolate to become hard and break up when I stirred it into the ice cream. I did this until I added enough chocolate (I added 3 ounces). I then transferred the ice cream into a plastic bowl with a lid and put it back into the freezer until after dinner. The final product was good but too sweet for me. I will try again...

Ambrosian Chicken

Great recipe, very easy and quick. I made some of my chicken with the yogurt sauce as directed and some with a mixture of honey, orange marmalade, crushed pineapple, the almond extract, red pepper flakes and egg due to my husband's no dairy diet. I also used that mixture (minus the egg) for his dipping sauce. I also didn't follow the cooking directions. I cooked mine at 400 for about 9 minutes then flipped for another 9 to 12 minutes, the coating came out toasty. My son loved the yogurt sauce but didn't really eat much of the chicken. I served this recipe with homemade sweet potato fries and fresh cut green beans.

Crunchy Fish Tacos

This was quick and easy. I did make a few changes… I used tortilla chips instead of taco shells and I also use a homemade taco seasoning. I dipped my tilapia in flour, then egg before I coated it with the chip and seasoning mixture. It makes a better crust that way. I also topped my taco with fresh sliced avocado, tomato and red cabbage (the tacos needed a little color).

Healthier Annie's Fruit Salsa and Cinnamon Chips

I added some grapes, blueberries and juice from one lime. I used one tablespoon of orange marmalade and two tablespoons of strawberry preserves. This recipe is great and you can add any fruit. It can be made with whatever is in season or on hand. My son loves it! One minor issue my chips were not really crunchy, but I like this salsa with regular tortilla chips.

Grilled Peanut Chicken

This is a quick and easy meal. I made two chicken breast but still made the sauce for four servings, using crunchy peanut butter. I pounded the chicken down until it was about a 1/4" thick then salted and peppered both sides. I cooked it in a skillet with olive oil, instead of grilling. I will definitely make this recipe again.

Asian Lettuce Wraps
