The Best Vegetarian Chili in the World
This was absolutely amazing!
Not only is it vegetarian, but if you use Boca Crumbles, it can actually be vegan. With that said, it is absolutely a recipe that vegans, vegetarians, and meat lovers alike will adore. It's hearty and filling, fairly quick and easy to cook, and makes a ton of servings.
I brought a crockpot full of this to a potluck and still had some left for myself at home. I served with Italian bread and shredded Mexican cheese on the side.
Just a note, based on my own taste and what I had in the kitchen, I made these changes: no bay leaves, no celery, no chile peppers; instead of garlic cloves I used a few tbsp of store-bought minced garlic, instead of garbanzo beans I used pinto, frozen corn instead of canned; and I used Boca brand crumbles. not a big deal, just thought I'd note, it's definitely an easy recipe to alter based on your own taste!
