Grandma's Corn Bread Dressing

Reviewed: Nov. 28, 2013
Used this recipe this year. Made my cornbread with stone ground corn meal and no sugar. No changes other than seasoning to taste.. and it turned out perfectly. Thanks for sharing! This was exactly the taste of dressing from my childhood!

Philly Cheesesteak Sandwich with Garlic Mayo

Reviewed: Dec. 1, 2012
Fabulous! I did use sirloin instead of round steak..and added mushrooms (personal fav), but this recipe would stand perfectly on its own without any changes. The garlic mayo is amazing flavor addition! Whether or not it's true "Philly" matters not to this Texan. It's a great sandwich no matter what ya call it!

Italian Sausage Tortellini Soup

Reviewed: Dec. 2, 2009
Ok... I think I may have rated another similar recipe by accident...but...if not, a repeat ain't gonna hurt! This is an awesome recipe just as it is. Only thing I added was mushrooms (baby bellas) because I like 'em; used a merlot for the wine. Excellent! Will be making again and again. Everyone loved it.. the semi-Italians in the family, the rednecks, the grandkids..

Enchilada Casserole III

Reviewed: May 5, 2009
Tasty gets 4 stars, .. BUT... enchilada sauce definitely needs doubling (ran out and had to send someone to the store, delaying dinner with other "timed" dishes I planned to serve this with). Would be easier to buy a couple of large jars of enchilada sauce and call it a day. Also, there is confusion on the cook time per recipe as printed. Header says cook time is 35 minutes, instructions say cook 20 minutes then let sit for 5. 15 minutes can be a BIG difference in many dishes. Split the difference and cooked for 30 minutes. Rated 3 stars for recipe inconsistencies.

Light PHILLY 20-Minute Skillet Salmon

Reviewed: Apr. 1, 2009
Couldn't find garlic-herb cream cheese spread, so used onion-chive version and added a little garlic powder to it.. was very, very good. My family deemed it a "keeper", which means make it again soon! The sauce is exceptionally nice paired with the salmon. Thanks for sharing this recipe.

Easy Tuna Casserole

Reviewed: Aug. 27, 2008
I just love this recipe.. have made it many times with whatever cream of soup I have on hand and throw anything else in I might want to add, including seasonings; the kids love it, too! thanks.. thought it about time I sent a review. Five stars due to ease of preparation and very low cost feeding a family of 5.

Bread Machine Pizza Dough

Reviewed: Aug. 2, 2008
Excellent pizza dough recipe! Thanks for sharing it. Will be trying others, but this will definitely be a stardard of comparison. The dough cooked up perfectly. Great taste and texture like that of hand-tossed doughs. Cooked mine on a large pizza stone, bottom rack of the oven for about 18 minutes at the recommended temp. I lightly oiled the stone w/olive oil before spreading the crust; bottom of crust was perfect. Could taste the beer, but it wasn't overwhelming and the kids didn't comment on any "odd" taste at all. Well done.. this is a keeper.

Win's Shrimp and Spaghetti

Reviewed: Jul. 6, 2008
This was ok. I followed suggestions of another reviewer and substituted olive oil for some of the butter; the idea of so much butter sort of turned me off. Even using unsalted butter, it was far too salty a dish. The teriyaki flavor was just a bit too strong, too. After putting it all together and tasting, I sauteed some mushrooms on the side w/a little green onion, and added them to the pot. That helped a little bit, if only to cut the teriyaki flavor a litte. I really couldn't taste the creole seasoning, but was reluctant to add more due to the already considerable saltiness.

Spinach Dip With Cajun Pita Chips

Reviewed: Jun. 25, 2008
I should have read reviews and followed the suggestion to brush the pita wedges with butter and then sprinkle with seasonings before baking. It would probably to worth it, too, to buy a very good quality pita bread. The dip was very bland, and since I've never made spinach dip before, I had no idea what kind of help it really needed.. so added a little cajun seasoning to it, too. It was ok. It will likely be better after sitting a bit longer in the the fridge, although we did let it chill for an hour before serving. Overall, not impressed and will not likely make it again...chips or dip. Sorry to be so negative about it :(

Champagne Shrimp and Pasta

Reviewed: Aug. 13, 2007
This is better than good. I bought cheap champagne 'cause all champagne tastes raunchy to me; stumbled through the 2 cups heavy cream called for in the ingredients list with recipe instructions for only 1 cup (used both cups and thickened the sauce so the shrimp weren't overdone); served it up to babies and grandpas and everyone in between. This is one keeper of a recipe! By the way.. it has a lovely presentation.. so is great for company. Thanks! Oh yeah.. something else: I was at the grocery store buying the ingredients at 5:30pm (after long day at work), got home at 6:00pm, had dinner on the table by 6:45pm. Easy.. and fast!
