Cinnamon Croutons

Super easy! I had a few leftover mini croissant from a baby shower, so I cubed those and tossed with melted butter and then the cinnamon sugar. Only needed about 5 minutes or so of bake time since they are so light. Delicious!

Instant Rolls

Somewhere between a biscuit and a roll...doubled the recipe, don't use self rising flour, so I used 2 cups flour, 1 Tb. baking powder, 1 tsp salt. Only used 4 Tb. sugar since everyone said it was sweet. Served with Honey butter and everyone was happy happy! Loved that I had last minute guests and threw these together so quickly!!

Pineapple Upside-Down Cake VII

I used the Pineapple Supreme cake mix and a combo of the drained pineapple juice and pineapple rum for the water. I use an 11 inch cast iron skillet and the presentation is always lovely. And it stays super moist, too!

Pumpkin Cake III

This was very moist, very tasty and not overly sweet. I replaced half the oil with applesauce and it didn't affect the texture at all! I was in a hurry so I made it in a bundt pan and used canned cream cheese frosting that I melted in the microwave for 30 seconds and poured as a glaze over top.

Colette's Smoked Sausage Fritatta

Like most everyone else, I adjusted the add-ins to what I had on hand (caramelized onion and swiss cheese) but the basic egg base I kept the same. I started it in my grandmother's cast iron skillet and finished it in the oven. I also added a good dose of fresh black pepper and a touch of fresh ground nutmeg. Loved the addition of the sour cream, it did give the eggs more body and added a nice tang.Thanks, Colette!

Eclair Cake

This is now my son's "famous" recipe (thanks, Cathy!) he's 12 and whips it up himself for many get -togethers. Sometimes he switches up the pudding flavors (banana and cheesecake are his favorites) but in general, this recipe comes together quickly and easily and never fails to find a captive audience!

Banana Coconut Loaf

This was rated OMG by my 12 year old, so I decided that was a 5 star! Followed to a T up to add ins - skipped the walnuts and cherries (no walnuts on hand, kid nixed the cherry idea!) and threw in a 1/2 cup of chocolate chips instead. Good enough to be breakfast, dessert, snack, or if you're lucky enough to have it last that long, all three!

I made this, too, but used FF evaporated milk instead of half and half. I also used PB and a little honey instead of sugar. It was truly delicious and so happy it has such a nutritional punch!

Italian Cheesecake II

I also love this dessert! In the hubster's fam, though they call it "Ricotta Pie" but the classic flavors are the same. It isn't a classic "cheesecake", but it is an Italian classic! I haven't tried freezing it yet, but we have several things coming up and I just might try that!

Cuban Beans and Rice

Alabama Fire Crackers

These are truly addictive and almost stupid easy(a definite bonus in my book!) I used 2 bags of oyster crackers instead of sltines. and a little less oil and more pepper flakes because we like them spicier! Very tasty!

Watermelon Fire and Ice Salsa

We loved this salsa!Put the chopped watermelon in a strainer to drain while you chop the other ingredients. allow the flavors to combine for a few hours before serving and I always add way more cilantro(just big fans!) and usually use yellow and orange bell pepper for a prettier presentation. Kids and adults alike love this salsa!!

Smoked Paprika Vinaigrette

This is really tasty! Used it to dress a pasta salad with black beans, roasted corn, sweet pepper, candied jalapeno, onion and crumbled queso fresco. It made a delicious side for BBQ pulled pork. The smokiness is a hit! I did decrease the oil a bit and added more honey to the finished salad.

Cheesy Beans and Rice

Very easy and very tasty! I used black beans as that was what I had on hand and I just threw it all together instead of layering. My boys liked it and it was really quick to throw together. Bet you could double it and throw it in the crockpot, too....

Angela's Awesome Enchiladas

Very tasty! Did cook my chicken in the crockpot w/ some onions, abodo, and the green chiles in chicken stock, shredded like a dream. I also addded some cilantro because we love it. I must admit I am too lazy to roll enchiladas, so I did mine sort of chilequiles-style by cutting the tortillas into strips and toasing them for a couple minutes in the oven. I then layered everything like a mexican lasagna instead of rolling. Everyone was happy!!

Curried Coconut Chicken

Made this tonight to rave reviews. Used less chicken, but added a can of chickpeas. Subbed a can of Rotel with chilis for the canned tomatoes and a can of tomato paste for the sauce. Thickened up beautifully! Also prefer brown over white sugar. I served this over basmati and it was wonderful!

Birthday Bones

Little changes, but happy pooches! Wheat gluten isn't that great for dogs, neither is dairy, but loved the idea of quick easy cheap treats! I just subbed brown rice flour and veg broth for the flour and milk. I also added some honey. I rolled the dough out on parchment and ran thru it with a pizza cutter. Clean up is easier and my old lady doesn't care what shape her treats are!!! These are SO much easier on her GI system and my wallet!!!

Chicken Florentine Casserole

Made this as written and it was really good, but being my lazy self,the second time I made it with leftover chicken. First cooked chopped bacon in the skillet, then sauteed onion and then cubed chicken in bacon fat, added in the spinach and shrooms to wilt. Stirred in the remaining ingredients and served over hot cooked noodles. I t was really quick and easy and a really delicious way to use up leftover chicken!

Three-Meat Stromboli

i ususally have pizza sauce on the side for dipping. Usually use hot cappacola, salami, ham and sometimes prusciutto. I have also used corned beef and swiss cheese with sauerkraut. i like to dry out the sauerkraut in in a skillet for a few minutes before stuffing as well. I have served that with a brown mustard/ horseradish sauce! I like to braid the top of mine to hint a little what"s inside!
