My favorite family cooking traditions
Big family meals with the whole extended family. Making WAY too much food, and somehow finding it gets eaten! Baking with my grandmothers is a great memory, and making homemade candy with my mom is a tradition my sister and I will continue.
My cooking triumphs
Anything my guys eat and say "dinner's good." They're often men of few words...well, I guess they're just men!

Chicken Enchilada Slow Cooker Soup
Made this today with a few minor changes. I also added a can of rinsed black beans, no corn due to allergies, the juice of one lime, extra cilantro and chili powder. I served it with shredded pepper jack, sour cream, and extra lime juice. I pan fried slices of cooked polenta in a little butter and olive oil until they were golden brown and served them on top of the soup for those who can eat corn. Amazing!!

Cinnamon Croutons
Super easy! I had a few leftover mini croissant from a baby shower, so I cubed those and tossed with melted butter and then the cinnamon sugar. Only needed about 5 minutes or so of bake time since they are so light. Delicious!

Instant Rolls
Somewhere between a biscuit and a roll...doubled the recipe, don't use self rising flour, so I used 2 cups flour, 1 Tb. baking powder, 1 tsp salt. Only used 4 Tb. sugar since everyone said it was sweet. Served with Honey butter and everyone was happy happy! Loved that I had last minute guests and threw these together so quickly!!
