Fried Onion Rings

a "pinch" of just about any spice is lost in a cup or more of all purpose flour. I added some sugar, hot sauce, soy sauce, and garlic powder. Dad tested and Kid approved!

Bacon Cheeseburgers

I followed the recipe with the following tweaks: I added about 4-5 cloves of finely minced garlic to the mixture of bacon and onion. I also used about a palm full of seasoned breadcrumbs and 2 eggs to aid binding. Formed into patties and let them sit out for an hr or so before throwing them on a hot grill. I grilled them until medium ( not well done )They turned out nice and juicy without being "greasy"

Buttermilk Biscuits I

A few tips: Use stick margarine instead of shortening or lard. NEVER use any of those creamy tub margarine spreads ( they contain alot of water and aren't fit for baking purposes ) handle this dough as little as possible. too much gluten makes for a terrible biscuit. I use a cast iron skillet in a 400 deg oven as they need to rise up..not out. let them sit out at room temp about 20 - 30 minutes before baking. they will rise better. Take the time to butter one up as soon as you get it out of the oven. enjoy it before serving the rest of them.
