Baked Chicken

Very good and flavorful. I had 4 very huge breasts, so I cut them in half to make 8 servings. Doubled everything but the onion soup mix. I used regular Greek yogurt instead of the sour cream, and powdered garlic as I was lazy. Instead of butter, I sprayed the baking dish with Pam and also sprayed the tops of the chicken with Pam ( a secret catering trick) Overall, very good. Just be sure not to overcook the chicken. Pull when it's ALMOST done, as the carry-over temp will finish it off. I found 18 minutes to be just right.

Pepper-Honey Cedar Plank Salmon

I gave this 2 stars cuz the sauce is wonderful..unfortunately, so good, that it cancels out the flavor of the cedar plank. Sauce great on chicken or ribs in the oven or the grill w/out the cedar plank. You can't taste the "cedar-ness" with this recipe. The best I've found so far is a mix of mayo, whole grain mustard (3:1 ratio) S and P and fresh chopped dill (just a tad) spread over top. It brings out the cedar flavor w/out being over the top. I will use the sauce again, just not for this recipe.

Stuffed Artichokes

YUK! TOO much stuff, TOO time consuming, NOT worth the hassel. I threw 2 out of 3 away. The only good thing about this recipe is that I figured out I can steam the artichokes in veggie broth in the oven instead of boiling them. Nothing better than the tried and true steamed/boiled artichoke dipped in lemon butter. Will NOT make again.

Chilled Cantaloupe Soup

I used 1/2 a cantaloupe and 1 cup OJ, same lime and cinnamon.. It would make a great breakfast drink, or add some vodka and ice for an evening daquri. The taste was great; I think it's more suited to a drink than a soup. My 9 year old wants it for breakfast, and my 13 year old was afraid to try it. 5 star for taste, 1 star for soup.

Chicken Breasts with Balsamic Vinegar and Garlic

I thought it was very good, but I would do things a bit differently next time. I would pound out the chicken breasts before dredging them, as the thicker parts were very dry. I added 1 can of chicken broth instead if the 3/4 cup, and kept the rest the same. Very good flavor. Lots of leftover sauce for rice or potato's. My kids get nervous around mushrooms, so I gave them the chicken with out them, and they ate it!

Mushroom Soup Without Cream

ohmygod...what a great soup. The few changes I made were cabbage instead of leeks( I didn't have any) added a tad of garlic, white button and portabella mushrooms, 2 can's veggie broth and a can of beef gravy instead of the chicken broth. The rest was the same. Other's like it pured, but I prefered it chunky. I will Definately make it again and again.

Italian Meatball Sandwich Casserole

Yummy, but VERY rich. A little went a long way. I would 1/2 the cream cheese, and add cottage or ricotta cheese. I toasted the bread as suggested, and it turned out crunchy/gooey. I would also double the meatballs but otherwise it was very good..3 out of our 5 liked it. I would make it again, but not for a while.

Chicken Shawarma

I gave this a 4 star only because my hubby didn't like the tahini sauce, BUT I loved it! I've had this before at a resturant, and this recipe is right on. The kids and the hubby ate it without the sauce. I grilled the chicken (I used boneless breasts) and brushed the flatbread lightly with olive oil and grilled them just until warm when the chicken was done. A keeper for me...maybe I'll turn the tahini sauce into salad dressing for future use??
