Potato Leek Soup III

This soup is so good and so simple. It's definitely one of my go-to soup recipes. And while I think it's five stars as written, I have made one small adjustment - I sauté the leeks in half the butter called for, plus about a tablespoon of bacon fat. It adds a deeper flavor that is really yummy.

Sweet Hot Mustard Chicken Thighs

I marinated this overnight and made it for lunch today. Huge hit. I made it exactly as written. My husband's only complaint: "Next time, please make more." And like some others have suggested, I will double the onions.

Chicken Breasts in Caper Cream Sauce

I made this exactly as written and it was really yummy. My husband like it so much that he had the leftovers for breakfast the next because he didn't want to wait until lunch! lol I'm making it again today and will double the sauce, but that is the only change.

Chef John's Perfect Mashed Potatoes

Hey, I just made perfect mashed potatoes! ;-) I have been making mashed potatoes for years with mixed results. I followed Chef John's directions and recipe exactly as demonstrated/written and I finally know how to make proper mashed potatoes. I really appreciate the tip about cutting the potatoes lengthwise. It did make a difference. Also, in my past attempts, I think I tended to over-mash them. His technique and timing was right on. Thank you Chef John!!!

Slow Cooker Beef Stew I

I based my rating on the recipe made exactly as written. It was okay. I think if I make it again, I will omit the Worcestershire sauce (it added a weird hint of sweetness (?) to it), add a cup of frozen peas in the last 15 minutes, and increase the salt to 1 to 1-1/2 teaspoons.
