My Favorite Mexican Rice

Reduced the salt as others recommended and it was delicious..I doubled the recipe for a church function so it took a little longer to cook but it was still awesome. Will definitely make again.

Marinated Cheese

I have been making this recipe for years--my family loves it. A few tips: Use ONLY Philadelphia brand cream cheese, cut in half long ways then put it in the freezer for about 15 minutes before cutting--if not, you will have a gooey mess. If you are using dried parsley, use 1 1/2 tbsp. You can sub red wine vinegar for white wine but white is best.

Chewy Coconut Cookies

Home-Style Scalloped Potatoes

Very yummy!! I have never made scalloped potatoe's that I liked, either too dry or not done enough until now. I par-boiled the potatoe's first as another reviewer suggested and did add cheese--they were perfectly done and delicious! Thanks for sharing!

Mom's Stovetop Pork Ribs

EXCELLENT! I saw that other's made them with bone in country style pork ribs so I did the same (had some in the freezer)--the flavor was awesome! Thanks for sharing, will definately make again!

Baked Potato Skins

De-Lish! Followed the recipe pretty much to a tee but I did add some of the bacon drippings to the oil mixture for flavor-will definately make again--thanks for sharing this great recipe!

Best Big, Fat, Chewy Chocolate Chip Cookie

AWESOME!! I prefer smaller cookies so I used a 1 1/2" scoop and baked them for 12 minutes--it made about 4 dozen cookies--I also added pecans--DE-LISH!! Thanks so much!!

World's Best Potato Salad

This is the best potato salad I have EVER made!! I followed the other suggestions but needed a smaller amount so I only used 4 potato's and 4 boiled eggs--that's the only reduction I took--having the extra dressing made it extra creamy and good!! I also used 1/8 cup bacon grease and 1/8 cup butter in the dressing (it called for 1/4 c butter) for an extra "bacony" flavor--YUM-O!!!

Sloppy Joes II

I am not a lover of Sloppy Joes but these are great! My husband has always wanted me to make Sloppy Joes for him but I never have liked any of the receipes I have tried--until now! The first time I made them, I recalculated the recipe and fed a crowd of 30 people--there wasn't a drop left! Each time I have made these I have doubled the sauce ingredients. Yum-O!

Baked Garlic Parmesan Chicken

All I had was Panko bread crumbs which worked great--this was wonderful! Served with spaghetti and red sauce--wonderful chicken parmesan!! So good my husband asked for it again the next day...

Lisa's Chocolate Chocolate Chip Cake

This is an awesome, easy chocolate cake recipe! I used a Devil's food cake mix (personal preference) and hot coffe instead of water for an extra rich chocolate flavor. I would not change up this recipe making it "less fattening"--it's a Chocolate cake for goodness sake--"Live, Love, Eat!!" (as Wolfgang Puck says)

Four Egg Yellow Cake

Excellent! I used butter instead of shortening--it was moist, dense and very yummy--just the way I like a yellow cake--I served it with a home made chocolate butter cream icing and it was fabulous!! Thanks for sharing!

Chicken Breasts Pierre

Yummy! My husband and I are dieting so I did a lower fat version--no breading, just seasoned the chicken breasts and sauted in a little olive oil and butter. I also used petite diced tomatoes, substituted chicken broth for water, used spenda instead of brown sugar and added thinly sliced red onions and pepper strips (frozen). Served over brown rice it was delicious and a very healthy, well balanced meal!

Crunchy Lettuce

I make this salad all of the time--my friends and family LOVE it! Instead of 6 slices of bacon, I use the whole 1 lb. package--I also use 2 packages of pre-shredded lettuce instead of shredding my own--much easier. YUMMM!
