I cooked professionally for about 30 years though I never got to the "chef" level. I was a very good back-up cook. I am most comfortable working from a recipe.

being able to cook a large menu meal, and with proper timing and presentation, serve all the hot food hot, and the cold food cold at the proper time, and still be able to sit and enjoy the meal with my guests. Sound easy? Try it sometime.
