Baking Powder Biscuits

These biscuits turned out awesome! My husband said he felt like he was having a "down-home country breakfast". By far the best scratch biscuit recipe I've come across.

Flourless Peanut Butter Cookies

These cookies are great! My son is on a gluten free casein free diet and so I've been finding alternative goodies. These don't taste like I'm trying to pass something off on him. :) I used smuckers all natural peanut butter for about 1/3 of it, then used cashew macadamia nut butter from Trader Joe's for the rest. I thought they were great. Not too sweet. I was careful not to overcook them. I may add vanilla next time. Thanks for a great cookie for my son!

Roasted Garlic Mashed Potatoes

So yummy and extraordinarily easy. I am looking forward to having some of the leftovers as a midnight snack. :) I made them as called for, but I didn't measure the milk, butter, or olive oil.

Pumpkin Chocolate Chip Muffins

These muffins were good, but not as light as I expected them to be. I doubled the recipe and used coconut oil instead of veg. oil and I used half whole wheat flour and half white flour. I am glad I made the double batch because they are being eaten quickly. The only thing I wish is that the pumpkin flavor was stronger.

Swedish Cardamom Meatballs

My hubby and I loved this! I took the advice of an early post and cut back on the sugar and also left out the MSG, but otherwise stuck closely to the original recipe. My kids preferred the meatballs w/o the sauce. Not everyone will like the spices in the sauce. I served over rice and this made a lot. I saved about half the meatballs to freeze for another time.
