REALLY Real Strawberry Cupcakes

Reviewed: Apr. 12, 2014
Batter was too thick to pour. 8-10 minutes for mini cupcakes is not enough time 12-14 maybe. Mine were more like muffins. Wound up making a box mix to take to party at last minute :(

These were good, but I thought they needed to cook a few more minutes (12-13).

Easy Omelet in a Bag

Reviewed: Dec. 18, 2013
Definitely a good idea for camping. I used a quart size bag because I didn't have resealable sandwich bag size. I would recommend smaller bag, as larger bag spread out ingredients to much. I also used only 1 egg and substituted fresh spinach for green pepper. I used too much mushroom and spinach for the amount of egg I used as these are watery products. I also found it seemed to stick to inside of bag. Think I will stick to fry pan inside the house.

Avocado, Tomato and Mango Salsa

Reviewed: Sep. 14, 2013
Have actually used dried mango and turns out great. Just let it set for an hour or so to allow mango to soak up flavors.

I made as is. I think the people leaving out creams are missing out!

A little spicey even though I cut back on red pepper a bit, but everyone loved it.

I don't usually toast my almonds, just add them as is. This time I did toast almonds and sesame seeds. Wow, what great flavor. I try to keep cooked bacon in the freezer to cut down on prep time.

Sweet and Spicy Sweet Potatoes

Reviewed: Sep. 29, 2013
I coated potatoes well with oil first then mixed all spices together before sprinkling on potatoes. I too doubled batch. Cut potatoes into 1/2 inch cubes. Added an extra 10 minutes to get them to brown nicely. Agree that a little salt would be good, but they are good without too.

Catherine's Spicy Chicken Soup

Reviewed: Aug. 11, 2013
This makes way more than 8 servings as it has 8 chicken breasts and then 8 cans of various ingredients. Also, not sure how it can be ready in 45 minutes if I am simmering chicken for an hour? I didn't have 5 cups of broth left after simmering for 45 minutes. Very spicy and salty. Next time will only add 2 bouillons and half of salt. Omitted soup. Don't like to make soup out of soup. The sour cream is an absolute must. The creaminess, in my opinion, is what makes it great.

too much vinegar and we prefer slivered almonds over sunflower seeds. Also agree halved seedless red grapes in place of raisins.
