Mexican Hot Chocolate Chex(R) Mix
I agree that this is an awkward recipe. High maintenance might be more like it. I used high quality cinnamon, but didn't taste the flavor in the finished product. I think there are easier recipes with better results. Taste was okay and I know it will get eaten. Wouldn't say it tasted like Mexican hot chocolate at all.

Chef John's Caramel Chicken
I used chicken legs since they were on sale, and the sauce did take longer to reduce, but the prolonged time just meant the chicken could really absorb that wonderful flavor. I may decrease the water next time as mentioned by someone else. I did omit the peanuts only because I didn't have any on hand. Very good recipe.

Grilled Balsamic and Soy Marinated Flank Steak
Used Pomegranate Balsamic Vinegar as it was all I had on hand. Wasn't crazy about the taste of the marinade, but let the steak marinate in the fridge for 2 days. Really like the results.
