Chicken Noodle Casserole

Reviewed: Mar. 1, 2007
AWESOME RECIPE LORI! Thanks for submitting. I substituted 1 tsp. poultry seasoning and used shredded colby jack cheese, and black pepper because I didn't have savory, cheddar, or white pepper. Next time I will double the black pepper. I also used the cooked meat from a 3 lb. chicken that I had in the freezer. This may have been a little more chicken than the recipe called for. It filled my 9 x 13 pan to the brim, but did not boil over in the oven. Colorful, appetizing appearance, and TERRIFIC TASTE. This is big time comfort food. I will make it often.

Cream Cheese Christmas Cookies

Reviewed: Nov. 25, 2006
These cookies are my holiday favorites. I have been baking them at Christmas every year for about ten years now. They have a great flavor and look festive on the cookie tray. Be careful not to overbake them - - very lightly browned is perfect for a slightly chewy, cheesecake taste.

Honey Whole Wheat Bread

Reviewed: May 20, 2007
This is a good basic whole wheat bread. I gave it 4 stars instead of 5 because it has a very soft texture, like a store bought bread, and I prefer a bit more density.

Outstanding! We love these. The only change I make is light brown sugar instead of dark, and bake at 375 degrees.

Walnut Chicken Skillet

Reviewed: Jun. 14, 2008
Really good! Great flavors, and easy to make. I will definitely make this again, but next time I will decrease the oil to 2 tbs. Be sure to watch the walnuts closely while toasting them as they burn easily.

Nutty Whole Wheat Bread

Reviewed: Dec. 9, 2007
EXCELLENT! This bread worked great in my bread machine. I used bread flour instead of AP flour, and put the liquids, salt and yogurt into the pan first, then added the dry ingredients. The dough was very stiff at first and I added about 1/4 c. of water, (one tablespoon at a time) to get the right slightly sticky consistency. Because bread dough is very sensitive to the temperature and moisture content of the air in the house at the time, it may be necessary to add either water or flour to get the right consistency. The dough should gather up into a ball, but should still be a little sticky. This made a large 2-lb size loaf. It is just the right texture - soft, but not too soft. Great toasted! Thanks for the recipe Rosadene!

Lemon Ice I

Reviewed: Feb. 21, 2009
Great recipe! Following the advice of others I reduced the sugar to 1-1/2 c., (actually 1 c. sugar and 1/2 c. of Splenda), and increased the lemon juice to 3/4 c. of Meyer lemon juice. For those who would like to know how much juice one lemon has, I measured 1/4 c. from a medium sized lemon. It's only a general guideline. I'm sure it could vary depending on ripeness, etc. My result was excellent. Just the right amount of sweetness and tanginess, and I love that I don't have to feel guilty eating it.

Cottage Cheese Pancakes

Reviewed: Feb. 14, 2011
I made these with whole wheat instead of white flour and added a few blueberries to each pancake after pouring the batter onto the griddle. Very easy to make with a custardy, crepe like texture.

Double Chocolate Brownie Cake

Reviewed: Sep. 5, 2009
I have made this twice now. The first time I made it exactly as written - Excellent! The second time I lightened it up with sugar-free chocolate pudding, light sour cream, half the chocolate chips, and applesauce instead of oil- still Excellent! The lighter version stayed moist and tasted like a brownie, but not quite sweet enough. Next time I will add 1/2 c. Splenda. Thanks for submitting this awesome recipe.

This is ABSOLUTELY AWESOME - one of the very best cakes I have ever tasted. I made it exactly as posted. I don't know how anyone could think this recipe is bland or ordinary.

DH likes this. The only change I made was to substitute Splenda instead of sugar. This dressing is much better than anything you can buy in the store.

Cranberry Crumble Coffee Cake

Reviewed: Dec. 31, 2009
Like other reviewers I used the whole can of cranberry sauce, but otherwise I followed the recipe exactly as written. Absolutely one of the very best coffee cakes ever! The cranberry filling did not sink to the bottom at all. Some, of the filling did push toward the outside edge when I smoothed out the top layer of dough, but plenty stayed in the middle and it was pretty from the outside that way. Thank you for submitting this lovely recipe.

Apple Crisp II

Reviewed: Oct. 14, 2012
I used ten medium granny smith apples and following another reviewer's recommendations I reduced the water to 1/4 cup and cut cold butter into the topping rather than melt it. The result was delicious, but next time I will use 9 apples and follow the recipe with regard to the water and the butter. The topping turned out a little too dry for me. I will definitely make this recipe again, but will make it exactly as written.

Country Seed Bread

Reviewed: May 18, 2009
Love this bread! I have made this bread four times, and it is a favorite. I scaled to 15 servings for a 2 lb. loaf and increased the yeast to 2 tsp. Otherwise I followed the recipe. I toasted the seeds in my toaster oven using the small pan that came with it. Very easy to do. Thank you for submitting. Update: I tried this without toasting the seeds first as some reviewers suggested -- big difference! Much, much better with toasted seeds and well worth the effort.

Shoepeg Corn Casserole

This is pretty good. The shoepeg corn stays nice and crispy. It also makes quite a bit. I added some cubed ham to the leftovers. Very yummy! I'll probably put the ham in right away next time I make this.

I followed another reviewer's lead to cut fat and sugar. I used nonfat whipped topping, low fat cottage cheese and sugar free lemon jello. Delicious, guilt free, and it couldn't be easier! DH loves it too. I will be making this often.
