Lemon Ice I

Reviewed: Feb. 21, 2009
Great recipe! Following the advice of others I reduced the sugar to 1-1/2 c., (actually 1 c. sugar and 1/2 c. of Splenda), and increased the lemon juice to 3/4 c. of Meyer lemon juice. For those who would like to know how much juice one lemon has, I measured 1/4 c. from a medium sized lemon. It's only a general guideline. I'm sure it could vary depending on ripeness, etc. My result was excellent. Just the right amount of sweetness and tanginess, and I love that I don't have to feel guilty eating it.

Whole-Wheat Chocolate Chip Cookies

Reviewed: Feb. 15, 2009
AWESOME COOKIES! I usually try to make things as healthy as possible, so I made these with Smart Balance Butter Blend (stick type spread)instead of butter, Splenda instead of white sugar, and organic brown sugar. I used only half the amount of chocolate chips called for, and the full amount of chopped walnuts. Next time I will cut back even more on the chocolate chips. The dough was so thick that I had difficulty stirring it with my wooden spoon. I was tempted to add another egg, but I'm glad I didn't as the cookies turned out so great. I flattened them just slightly before baking. They spread out to about double their size, so don't put them too close together. One other thing is that I noticed a big difference between my two insulated cookie sheets. One has a dark brown no-stick finish and the other has an aluminum colored finish. This probably doesn't have anything to do with the recipe, but the dark finish produced a MUCH nicer cookie.

MMMMM... Brownies

Really good To make these brownies a little healthier I made them with splenda and served warm with sugar-free lofat vanilla ice cream. Absolutely delicious and I didn't feel so guilty. Thanks for a great recipe!

Honey Wheat Sandwich Rolls

Reviewed: Feb. 7, 2009
I really love this recipe. It was easy and fun to make. I was out of honey so I subbed molasses with good results - nice flavor and brown color. These rise up really well, so I think it is better to roll the dough out to 1/2" thickness. Next time I will omit the butter on top it made the rolls a little greasy, and I don't think it added anything to the taste.

Big Soft Ginger Cookies

Reviewed: Feb. 3, 2009
These are really good! I made them the first time subbing 1/2 of the sugar for Splenda and rolled them in white sugar. The second time I used all raw sugar. Loved the raw sugar on the outside, but prefer the 1/2 Splenda / 1/2 sugar mix for the main sugar ingredient. Next time I will use 1/2 Splenda in the mix and roll the cookies in the raw sugar. Thanks for a great recipe!

Pudding Cookies I

Reviewed: Jan. 31, 2009
Great idea, but something must have been left out of this recipe. Probably the sugar. I am sorry, but I made this recipe exactly as stated and got about 15 very small bitter tasting cookies. No one would eat them.

SO-O-O-O GOOD! I made just a couple of minor changes - I used 2 chopped carrots, 2 sliced stalks of celery, and a bay leaf, but otherwise followed the recipe. This is great comfort food. Thank you for submitting this recipe. I will definitly make it again.

Outstanding! We love these. The only change I make is light brown sugar instead of dark, and bake at 375 degrees.

Deviled Eggs

Reviewed: Nov. 30, 2008
Sometimes simple is best. I made this recipe exactly as written. These are just plain good deviled eggs. I would never have thought of putting sugar in the mix, but the sugar is the key. This will be my standard deviled egg recipe.

OH MAN! THIS IS GOOD!! I made it as written except that I used Splenda for all but one tablespoon of the sugar. It's the night before Thanksgiving and if I had another pear I would make a double batch. Thank you for this wonderful recipe.

Chocolate Applesauce Cake II

Reviewed: Nov. 23, 2008
I made this exactly as printed. It was easy and tasted ok, but I had a problem getting the melted chocolate to blend in. I will probably make it again, but I will definitely use cocoa powder instead of a chocolate square. Also, the cake was almost too moist. I will probably add about 1/4 c. additional oats next time.
