I've been in the kitchen since I was about thirteen. I've never stopped and finally after I retired from my own business went to work as a professional chef.
My favorite things to cook
Loving Moroccan Tajines right now. They're so fresh and temptingly spiced. Also love Cajun, always have.
My favorite family cooking traditions
I learned comfort foods from my mother. Today comfort food is what we used to call, "eating on a budget." Some things I do as well as she did. Others, I don't know, will never turn out the same as hers did.
My cooking triumphs
Recently prepared a sit-down dinner for more than two hundred people. Wow was that tiring.
My cooking tragedies
I always try out new recipes (the ones that fall into my head) at home. If I like what I cook at one of these test times and my wife likes it, too, then I'm pretty sure I can use it in my regular cooking. Some of the most recent tragedies, sad to say, were meals prepared from recipes here on this site. You have to watch out about what you decide to try.

Louisiana Beef Stew
I did not care for this recipe. I thought it was a strangely spiced mix of onions, carrots and beef in a runny sauce.

Wasabi Mayo Salmon
The combination of Wasabi and Mayonnaise does not go together well, particularly when baked. The topping of crushed potato chips did not help. I was reluctant to give this one a try. Now that I have, I'll pay more attention to the inner voice that says, "Nah, you don't want to do this," and save myself some disappointment.
