Mediterranean Chicken

Reviewed: Nov. 16, 2011
This was one of those recipes where I almost had all of the ingredients necessary and it came out very nicely. I had black olives (not kalamata), I had a can of diced tomatoes (not fresh), I had vermouth (not white wine). A very flavorful dish and enjoyed by all.

Chicken In Basil Cream

Reviewed: Nov. 1, 2011
This was a nice twist on chicken primavera. I didn't have the pimentos and didn't use breading (we need gluten-free and didn't have any GF bread crumbs). It turned out wonderfully.

Chicken Marsala

Reviewed: Oct. 30, 2011
This was a great recipe. I made with gluten-free flour, our homemade red zinfindel wine (instead of marsala) and it came out perfectly.

Ranch Burgers

Reviewed: Oct. 24, 2011
I was concerned these would come out like mini-meatloaves, but they didn't and we were very happy with these burgers. We doubled the recipe and froze the leftovers. Good stuff.

Chicken Enchiladas II

Reviewed: Oct. 24, 2011
This filling was barely enough for 4 tortillas. Otherwise, this was a flavorful and different way for us to do enchiladas.

Slow Cooker Latin Chicken

Reviewed: Oct. 21, 2011
This was a flavorful way to use up some chicken thighs we had in our freezer.

Mini Meatloaves

Reviewed: Oct. 21, 2011
Tasty, simple and enjoyed by all (there was actually some fighting over the 2 leftover loaves the next day). The sauce could have been cut in half though.

Slow Cooker Chicken Stroganoff

Reviewed: Oct. 21, 2011
Flavorful and enjoyed recipe. We need gluten-free, and I had a chicken/corn chowder soup on hand that was used in place of the condensed cream of chicken soup in the actual recipe. This helped, since the GF pasta requires a lot more liquid/sauce.

Chicken Cordon Bleu II

Reviewed: Oct. 21, 2011
Flavorful and enjoyed recipe. There seemed to be way too much butter and sauce, we could have done with half of it, so that is the reason for 4 stars.

Chicken Chilaquiles

Reviewed: Jun. 21, 2009
Aside from the instructions not specifying to thaw the frozen corn (which some may find confusing), this is outstanding! We love it and will make it many times over!

Fierro Chicken

Reviewed: Jun. 14, 2009
I knew I would love this recipe, since the sauce is almost identical to our favorite dip, haha. This was awesome! I bought a bigger can of enchilada sauce, using the rest of it for the rice. This is a keeper!

Juicy Roasted Chicken

We didn't have any celery, but decided to try this recipe. We added paprika and it turned out very moist and delicious!

These were great and re-heated nicely the next day for lunch! We covered with white cheese sauce and will make them again and again :)

White Cheese Sauce

Reviewed: Feb. 22, 2009
I just couldn't get this to work out, even with following others' tips to cut back on the butter to 1/4 cup, and only use low heat. The flavor was good, the consistency wasn't (it quickly hardened and became grainy).

Chicken Chimichangas

Reviewed: Feb. 22, 2009
The flavor was great, and the filling was very plentiful! I gave 4 stars because the directions were not that clear for a beginner. It says to divide a few ingredients, but never instructs what to do with them once they're halved.

Poblano Corn Chowder

Good stuff! I wasn't able to obtain all the ingredients, but made subs and it turned out great. Added more shrimp and started with 1/4 cup sugar.

I used pecans instead of walnuts and canola oil instead of walnut oil = very yummy! I will make this often :)

Gourmet Caramel Apples

I used Werther's (sp?) candies in place of the caramel, topped with semi-sweet chocolate, then lightly salted peanuts (to offset the sweet). Good stuff!

Baked Zucchini Chips

Reviewed: Sep. 14, 2007
I gave this a 4, because I had to read back to get tips on making them better (increasing the cheese, adding more spices, etc.). I used gluten-free sundried tomato bread to make the crumbs and they came out very yummy.
