Mediterranean Chicken

This was one of those recipes where I almost had all of the ingredients necessary and it came out very nicely. I had black olives (not kalamata), I had a can of diced tomatoes (not fresh), I had vermouth (not white wine). A very flavorful dish and enjoyed by all.

Chicken In Basil Cream

This was a nice twist on chicken primavera. I didn't have the pimentos and didn't use breading (we need gluten-free and didn't have any GF bread crumbs). It turned out wonderfully.

Ranch Burgers

I was concerned these would come out like mini-meatloaves, but they didn't and we were very happy with these burgers. We doubled the recipe and froze the leftovers. Good stuff.

Tasty, simple and enjoyed by all (there was actually some fighting over the 2 leftover loaves the next day). The sauce could have been cut in half though.

Slow Cooker Chicken Stroganoff

Flavorful and enjoyed recipe. We need gluten-free, and I had a chicken/corn chowder soup on hand that was used in place of the condensed cream of chicken soup in the actual recipe. This helped, since the GF pasta requires a lot more liquid/sauce.

Fierro Chicken

I knew I would love this recipe, since the sauce is almost identical to our favorite dip, haha. This was awesome! I bought a bigger can of enchilada sauce, using the rest of it for the rice. This is a keeper!

I just couldn't get this to work out, even with following others' tips to cut back on the butter to 1/4 cup, and only use low heat. The flavor was good, the consistency wasn't (it quickly hardened and became grainy).

The flavor was great, and the filling was very plentiful! I gave 4 stars because the directions were not that clear for a beginner. It says to divide a few ingredients, but never instructs what to do with them once they're halved.

Gourmet Caramel Apples

I used Werther's (sp?) candies in place of the caramel, topped with semi-sweet chocolate, then lightly salted peanuts (to offset the sweet). Good stuff!

Baked Zucchini Chips

I gave this a 4, because I had to read back to get tips on making them better (increasing the cheese, adding more spices, etc.). I used gluten-free sundried tomato bread to make the crumbs and they came out very yummy.
