Cream Cheese Kolacky
I liked the flavor of the end result, but it was a lot of work to make this cookie. When I put 1/2t of apricot fruit spread into the middle of the dough per the instructions and baked it, the filling oozed out onto the pan. (I even measured the squares to make sure that they were 2.5 inch x 2.5 inch. I should have used Solo brand fruit filling as some of the reviewers had recommended. When I had used the Solo fruit filling in the past with this recipe, I got better results.

Toffee Crunch Cookies
The cookies spread a lot. The modifications I made to the recipe were as follows: replace 50% of the flour with whole wheat flour. Reduce the toffee bits to 1 cup. I added some chopped dark chocolate. The cookies were really good when paired with a cup of coffee. I toasted the pecans before mixing it into the batter. I also added a small amount of toasted coconut. Nice and crispy cookie.

Pumpkin Pancakes
The recipe is good with the following modifications: Use 1 C whole wheat pastry flour and 1 C flour. Add 1t cinnamon, increase the ground ginger slightly and andd 1t vanilla extract. Use 1 1/3 C pumpkin puree. Mix the vinegar and milk together to sour the milk. Replace 1 T of the vegetable oil with 3 T ground flax seed. Add a dash of ground cloves. Add 1t molasses. Add some extra milk as needed to thin the batter out. When the batter is ladled into the pan, you need to push it down slightly with the bottom of the ladle to spread it out since the batter is thick. It is best to cook the pancake on a cast iron pan.
