Red Skinned Potato Salad
Okay... so I changed a lot on the recipe, but it turned out wonderful! This was the first Potato salad I've made myself and needed a "base" to work with and this recipe fit the bill. I used 2 lbs potatoes, 4 hard-boiled eggs, 2 1/2 pickles diced, cocktail wieners sauteed in a homemade sweet BBQ sauce then diced, 2-4 tsp of Cholula hot sauce, 2-3 tbsp lemon juice, 4 pinches of dill weed, 8 oz of cream cheese, 1 3/4 cup sour cream, 1/4 cup ranch dressing. WOW!! This will be something I make for every kind of occasion. Especially if I'm looking to impress! ;)

Slow Cooker Lentil and Ham Soup
It was 5 degrees here in Colorado today and this soup was the BEST relief! I made a shank ham for Thanksgiving the week before and used the bone as well as some cut up pieces from it and also cut up about a cup and a half of red potatoes and used a chicken bouillon instead of the stock. It turned out fabulous! It made so much that I have another two dinners out of it that I am going to freeze. GREAT!

Southwestern Turkey Soup
My husband LOVED this soup! I put two cans of black beans, 4 cloves of garlic, 1/4 tsp paprika instead of cumin and I used chicken broth instead of vegetable broth. Awesome! Garnished with shredded cheese and a dollop of sour cream. Oh I also just dumped everything in the crock pot and left it for 6 hours. Never checked it once. Came home served it up and WOW! Delicious and easy! What could be better?!
